  • 4 boneless, skinless chicken breasts
  • 2 tablespoons olive oil
  • 2 tablespoons butter
  • 2 cups mushrooms, sliced
  • 3 cloves garlic, minced
  • 1 cup heavy cream
  • 1/2 cup chicken broth
  • 1 cup grated Asiago cheese
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon salt (adjust to taste)
  • 1/2 teaspoon black pepper
  • 1 tablespoon flour (optional, for thickening)
  • Fresh parsley (for garnish)

Instructions

Step 1:
Season the chicken breasts with salt and black pepper on both sides. Heat olive oil in a large skillet over medium-high heat. Add the chicken and sear for 5–6 minutes per side until golden brown and cooked through. Remove from the pan and set aside.

Step 2:
In the same skillet, melt the butter. Add the sliced mushrooms and cook for 5–7 minutes until they release their moisture and become golden brown.

Step 3:
Stir in the minced garlic and cook for about 1 minute until fragrant. Sprinkle in the flour (if using) and stir well to combine.

Step 4:
Pour in the chicken broth and heavy cream, stirring constantly to create a smooth sauce. Add the Italian seasoning and bring the mixture to a gentle simmer.

 

Step 5:
Stir in the grated Asiago cheese until melted and the sauce becomes creamy. Return the chicken to the skillet and coat it with the sauce. Let it simmer for 3–5 minutes until everything is heated through. Garnish with fresh parsley before serving.

Notes

Do not overcrowd the pan when searing the chicken, as this prevents proper browning. Cook in batches if necessary. Also, avoid boiling the sauce after adding the cheese, as high heat can cause it to separate—keep it at a gentle simmer for best results.
