Description
The Elvis Presley Cake is a legendary Southern dessert that perfectly captures indulgence, comfort, and rich flavor—just like the King himself. Known for its ultra-moist texture and irresistible combination of pineapple, cream cheese frosting, and crunchy pecans, this cake has become a favorite at potlucks, family gatherings, and celebrations.
Ingredients
For the Cake:
- 1 box yellow cake mix
- 1 can (20 oz) crushed pineapple (with juice)
- 1 cup granulated sugar
- 4 large eggs
- ½ cup vegetable oil
For the Topping:
- 8 oz cream cheese, softened
- ½ cup unsalted butter, softened
- 3 cups powdered sugar
- 1 teaspoon vanilla extract
- 1 cup chopped pecans
Instructions
Preheat your oven to 350°F (175°C). Grease a 9×13-inch baking pan.
In a large bowl, combine cake mix, eggs, oil, and half of the crushed pineapple with its juice. Mix until smooth.
Pour the batter into the prepared pan and bake for 30–35 minutes or until a toothpick inserted in the center comes out clean.
While the cake is still warm, spread the remaining crushed pineapple evenly over the top. Let it soak into the cake.
In a bowl, beat cream cheese and butter until smooth. Add powdered sugar and vanilla extract, mixing until creamy. Spread frosting over the cooled cake and sprinkle with chopped pecans.
Notes
Be sure to spread the pineapple topping while the cake is still warm so it absorbs fully, creating that signature moist texture.
