Description
Chicken Scallopini is a classic Italian-inspired dish that features thin, tender chicken cutlets cooked quickly and served in a light, flavorful sauce. Known for its simplicity and elegance, this dish combines delicate textures with bright, zesty flavors—usually from lemon, butter, and sometimes wine.
Ingredients
- 4 boneless, skinless chicken breasts (thinly sliced or pounded)
- 1/2 cup all-purpose flour
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 2 tablespoons olive oil
- 2 tablespoons butter
For the Sauce:
- 3 cloves garlic (minced)
- 1/2 cup chicken broth
- 1/4 cup fresh lemon juice
- 1/4 cup white wine (optional)
- 2 tablespoons capers (optional)
- 2 tablespoons fresh parsley (chopped)
Instructions
Place chicken between plastic wrap and pound to even thickness. Season with salt and pepper, then lightly dredge in flour.
Heat olive oil in a skillet over medium-high heat. Cook chicken for 3–4 minutes per side until golden. Remove and set aside.
In the same pan, melt butter and sauté garlic until fragrant. Add chicken broth, lemon juice, and wine (if using). Bring to a simmer.
Stir in capers and let the sauce reduce slightly for a richer flavor.
Return chicken to the pan and spoon sauce over the top. Cook for 2–3 minutes until heated through.
Sprinkle with fresh parsley and serve immediately.
Notes
Do not overcook the chicken—it cooks quickly due to its thinness and can become dry if left too long.
