Ingredients
For the Cake Layers:
- 2 1/2 cups (310g) all-purpose flour
- 2 1/2 teaspoons baking powder
- 1/2 teaspoon salt
- 1 cup (226g) unsalted butter, softened
- 1 3/4 cups (350g) sugar
- 4 large eggs
- 1 tablespoon vanilla extract
- 1/2 cup strawberry puree
- 1 cup (240ml) milk
For the White Chocolate Cream Cheese Filling:
- 8 oz (225g) cream cheese, softened
- 1 cup white chocolate, melted and cooled
- 1/2 cup powdered sugar
- 1 cup heavy whipping cream
For the Frosting:
- 1 cup butter, softened
- 3 cups powdered sugar
- 1/2 cup cream cheese
- 1 teaspoon vanilla extract
For Decoration:
- Fresh strawberries
- White chocolate shavings
Instructions
Preheat oven to 350°F (175°C). Grease and line two or three round cake pans.
In a bowl, whisk flour, baking powder, and salt.
In another bowl, beat butter and sugar until light and fluffy.
Add eggs one at a time, mixing well. Stir in vanilla extract.
Mix in strawberry puree, then alternate adding dry ingredients and milk until smooth.
Divide batter evenly into pans and bake for 25–30 minutes, or until a toothpick comes out clean.
Let cakes cool completely before assembling.
Prepare filling by beating cream cheese until smooth. Add melted white chocolate and powdered sugar.
Whip cream separately until stiff peaks form, then fold into the cream cheese mixture.
For frosting, beat butter, powdered sugar, cream cheese, and vanilla until creamy.
Assemble the cake: layer cake, spread filling, repeat layers.
Frost the entire cake and decorate with fresh strawberries and white chocolate shavings.
Notes
Make sure the white chocolate is cooled before mixing to prevent melting the cream cheese. Also, avoid overmixing the batter to keep the cake soft.
