Instructions
Step 1: Prepare the Oven and Cake Pans
Preheat oven to 350°F (175°C).
Grease and line two 9-inch round cake pans with parchment paper.
Set aside.
Step 2: Prepare the Strawberry Puree
Wash and hull fresh strawberries.
Blend until smooth.
Measure one cup of puree.
For stronger flavor, simmer the puree for 10–15 minutes and allow it to cool completely before using.
This concentrates the strawberry flavor beautifully.
Step 3: Mix the Dry Ingredients
In a medium bowl, whisk together:
- Flour
- Cornstarch
- Baking soda
- Baking powder
- Salt
Set aside.
Step 4: Make the Cake Batter
In a large mixing bowl, beat butter and sugar until light and fluffy, about 4–5 minutes.
Add eggs one at a time, mixing well after each addition.
Mix in:
- Strawberry puree
- Buttermilk
- Vanilla extract
- Strawberry extract
Gradually add the dry ingredients.
Mix until just combined.
Avoid overmixing to maintain a tender crumb.
Step 5: Bake the Cake
Divide the batter evenly between the prepared pans.
Bake for 28–32 minutes, or until a toothpick inserted into the center comes out clean.
Allow cakes to cool in the pans for 10 minutes.
Transfer to wire racks to cool completely.
Step 6: Prepare the Frosting
Beat cream cheese and butter until smooth and fluffy.
Gradually add powdered sugar.
Mix in vanilla extract.
Beat until light and creamy.
Step 7: Assemble the Cake
Place one cake layer on a serving plate.
Spread a generous layer of frosting.
Add the second cake layer.
Frost the top and sides of the cake.
Decorate with fresh strawberries, strawberry crumbs, or white chocolate curls.
