Strawberry Earthquake Cake – Gooey, Creamy & Irresistible Dessert

  • Author: iliass
  • Total Time: 1 hour

Description

This cake doesn’t need to look perfect—that’s part of its charm. As it bakes, the layers shift and swirl naturally, creating a beautiful marbled effect with a soft, moist texture and creamy pockets throughout. It’s the perfect mix of indulgence and simplicity.

Ingredients

Scale
  • 1 box strawberry cake mix
  • Ingredients required on cake mix (eggs, oil, water)
  • 8 oz (225g) cream cheese, softened
  • 1/2 cup butter, melted
  • 2 cups powdered sugar
  • 1 teaspoon vanilla extract
  • 1 cup fresh strawberries, chopped
  • 1/2 cup white chocolate chips (optional)
  • 1/2 cup shredded coconut (optional)

Instructions

Step 1:

Preheat oven to 350°F (175°C). Grease a baking dish.

Step 2:

Prepare the strawberry cake mix according to package instructions.

Step 3:

Pour the batter evenly into the prepared baking dish.

Step 4:

In a bowl, beat cream cheese until smooth.

Step 5:

Add melted butter, powdered sugar, and vanilla extract. Mix until creamy.

Step 6:

Drop spoonfuls of the cream cheese mixture over the cake batter.

Step 7:

Sprinkle chopped strawberries evenly on top.

Step 8:

Add white chocolate chips and coconut if using.

Step 9:

Swirl lightly with a knife—do not overmix.

Step 10:

Bake for 40–45 minutes until edges are set and center is slightly gooey.

Step 11:

Let cool slightly before serving.

Notes

Do not overbake—this cake is meant to be slightly gooey in the center. The “cracked” look is normal and part of the signature style.
