Ingredients
For the Strawberry Filling
- 4 cups fresh strawberries, hulled and sliced
- ½ cup granulated sugar
- 1 tablespoon lemon juice
- 1 teaspoon vanilla extract
- 2 tablespoons cornstarch
- ¼ teaspoon salt
For the Cobbler Batter
- 1 cup all-purpose flour
- 1½ teaspoons baking powder
- ½ teaspoon salt
- ¾ cup granulated sugar
- ½ cup unsalted butter, melted
- 1 cup whole milk
- 1 teaspoon vanilla extract
For the Cream Cheese Layer
- 8 ounces cream cheese, softened
- ½ cup powdered sugar
- 1 large egg yolk
- 1 teaspoon vanilla extract
- 2 tablespoons heavy cream or milk
Optional Topping
- 2 tablespoons granulated sugar
- Fresh strawberries
- Powdered sugar
- Whipped cream
- Vanilla ice cream
Instructions
Preheat your oven to 350°F (175°C).
Generously butter a 9×13-inch baking dish.
For easier cleanup, you can also lightly coat the dish with nonstick cooking spray after buttering it.
Wash and dry the strawberries thoroughly.
Remove the green tops and slice the berries into halves or quarters, depending on their size.
Place them in a large bowl.
Add the sugar, lemon juice, vanilla extract, cornstarch, and salt.
Gently toss until the strawberries are evenly coated.
Allow them to sit for approximately 5–10 minutes while you prepare the rest of the recipe.
The sugar will begin drawing out some of the strawberry juices.
In a medium bowl, whisk together the flour, baking powder, salt, and sugar.
Add the melted butter, milk, and vanilla extract.
Stir gently until you have a smooth batter.
Don’t overmix.
A few tiny lumps are completely fine.
Place the softened cream cheese in another bowl.
Add the powdered sugar, egg yolk, vanilla extract, and heavy cream.
Beat until smooth and creamy.
The mixture should be thick but spreadable.
If your cream cheese is still cold, it may be difficult to blend smoothly, so allowing it to soften at room temperature first is helpful.
Pour the melted butter into the bottom of the prepared baking dish if you’re using the traditional butter-bottom method.
Pour the cobbler batter over the butter.
Do not stir the layers together.
Spoon the strawberry mixture evenly over the batter.
Again, don’t mix.
As the cobbler bakes, the batter rises around the fruit and creates the delicious golden crust.
Drop spoonfuls of the cream cheese mixture over the strawberries.
Try to distribute it evenly across the surface.
You don’t need to spread it perfectly.
Leaving small gaps allows the strawberry filling and cobbler batter to peek through as everything bakes.
For a slightly crispier top, sprinkle 1–2 tablespoons of granulated sugar over the surface.
This creates a beautiful lightly caramelized finish.
Place the baking dish in the preheated oven.
Bake for approximately 45–55 minutes.
The edges should be golden brown and bubbling.
The center should look mostly set, although it can remain slightly soft because of the cream cheese and fruit filling.
If the top becomes too brown before the center is finished, loosely cover the cobbler with aluminum foil during the final 10 minutes.
Remove the cobbler from the oven.
Allow it to rest for approximately 15–20 minutes.
This gives the strawberry juices and cream cheese layer time to thicken.
The dessert will be very hot immediately after baking, so letting it rest also makes it easier to serve.
Spoon generous portions into bowls.
Top with a scoop of vanilla ice cream.
For an extra beautiful presentation, add fresh sliced strawberries and a drizzle of strawberry or caramel sauce.
Notes
The consistency of the strawberry filling depends on how juicy your berries are.
Very ripe strawberries can release a significant amount of liquid during baking. The cornstarch helps thicken those juices into a delicious strawberry sauce.
Don’t worry if the cobbler looks slightly loose when it first comes out of the oven.
It continues to set as it cools.
Another important point is not stirring the layers after assembly. The magic of a cobbler happens in the oven as the batter rises around the fruit.
