Ingredients

Scale

🍓 For the Biscuits

  • 2½ cups all-purpose flour
  • 1 tablespoon baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • ⅓ cup granulated sugar
  • ½ cup unsalted butter, very cold and cubed
  • 1 cup buttermilk, cold
  • 1 teaspoon vanilla extract
  • 1½ cups fresh strawberries, diced

🍰 For the Vanilla Glaze

  • 1 cup powdered sugar
  • 2 tablespoons milk
  • ½ teaspoon vanilla extract

Optional Toppings

  • Fresh strawberry slices
  • Powdered sugar
  • Whipped cream
  • Strawberry preserves

Instructions

Step 1: Prepare the Oven

Preheat oven to 425°F (220°C).

Line a baking sheet with parchment paper.

Set aside.

Step 2: Mix the Dry Ingredients

In a large bowl whisk together:

  • Flour
  • Baking powder
  • Baking soda
  • Salt
  • Sugar

Mix thoroughly.

Step 3: Cut in the Butter

Add cold cubed butter.

Using a pastry cutter or fork, cut the butter into the flour mixture until it resembles coarse crumbs.

Small butter pieces are essential for flaky biscuits.

Step 4: Add Buttermilk and Strawberries

Mix together:

  • Buttermilk
  • Vanilla extract

Pour into the flour mixture.

Stir gently until a shaggy dough forms.

Fold in diced strawberries carefully.

Do not overmix.

Step 5: Shape the Biscuits

Turn dough onto a lightly floured surface.

Pat into a rectangle about 1-inch thick.

Fold the dough over itself 3–4 times to create layers.

Pat down again.

Use a biscuit cutter to cut biscuits.

Place them on the prepared baking sheet.

Step 6: Bake the Biscuits

Bake for 14–16 minutes or until the tops are lightly golden.

Remove from oven and cool slightly.

Step 7: Make the Glaze

Whisk together:

  • Powdered sugar
  • Milk
  • Vanilla extract

Drizzle over warm biscuits.

Serve immediately.

Notes

  • Keep butter extremely cold.
  • Use fresh strawberries whenever possible.
  • Avoid overworking the dough.
  • Pat dough gently for tender biscuits.
  • Chill cut biscuits for 10 minutes before baking for extra height.

  • Serve warm for best flavor.
