Description

This is the kind of dessert that belongs on a Southern family table. It’s perfect for Easter, Thanksgiving, Christmas, birthdays, Sunday dinners, church gatherings, potlucks, family reunions, and special celebrations.

For the Cake

  • 2 cups all-purpose flour
  • 2 teaspoons baking soda
  • ½ teaspoon baking powder
  • 1 teaspoon salt
  • 2 teaspoons ground cinnamon
  • ½ teaspoon ground nutmeg
  • ½ teaspoon ground ginger
  • 1½ cups granulated sugar
  • ½ cup packed light brown sugar
  • 4 large eggs
  • 1 cup vegetable oil
  • 2 teaspoons vanilla extract
  • 3 cups finely grated carrots
  • 1 cup sweetened shredded coconut
  • 1 cup chopped walnuts
  • ½ cup crushed pineapple, well drained, optional

For the Cream Cheese Frosting

  • 8 ounces cream cheese, softened
  • ½ cup unsalted butter, softened
  • 4 cups powdered sugar
  • 2 teaspoons vanilla extract
  • 12 tablespoons heavy cream or milk, as needed
  • Pinch of salt

Optional Garnish

 

  • Chopped walnuts
  • Toasted coconut
  • Small carrot cake crumbs
  • Thin carrot-shaped decorations

Instructions

Step 1: Prepare the Oven

Preheat your oven to 350°F (175°C).

Grease two 9-inch round cake pans.

Line the bottoms with parchment paper and lightly grease the parchment.

You can also bake the batter in a 9×13-inch baking pan if you prefer a simple sheet cake.


Step 2: Prepare the Carrots

Peel the carrots and grate them using the fine or medium side of a box grater.

Freshly grated carrots are strongly recommended.

Avoid using pre-shredded packaged carrots because they tend to be drier and don’t soften as nicely during baking.

Measure 3 cups after grating.

If the carrots are extremely wet, gently blot them with a paper towel, but don’t squeeze them completely dry.


Step 3: Toast the Walnuts

Place the chopped walnuts in a dry skillet over medium-low heat.

Toast for approximately 3–5 minutes, stirring frequently.

Once fragrant, remove them from the heat and allow them to cool.

Toasting isn’t absolutely necessary, but it gives the walnuts a richer, deeper flavor.


Step 4: Combine the Dry Ingredients

In a medium bowl, whisk together:

  • Flour
  • Baking soda
  • Baking powder
  • Salt
  • Cinnamon
  • Nutmeg
  • Ginger

Whisk until the spices are evenly distributed.

Set aside.


Step 5: Mix the Wet Ingredients

In a large mixing bowl, whisk together the granulated sugar, brown sugar, eggs, vegetable oil, and vanilla extract.

Mix until smooth and well combined.

The mixture should look slightly thick and glossy.


Step 6: Add the Dry Ingredients

Gradually add the dry ingredients to the wet mixture.

Stir gently until just combined.

Do not overmix.

The batter may look thick, but that’s completely normal.


Step 7: Add the Carrots, Coconut, and Walnuts

Fold in:

  • Grated carrots
  • Shredded coconut
  • Toasted walnuts

If using crushed pineapple, fold it in at this stage as well.

Use a spatula and gently mix until everything is evenly distributed.

You want every slice to have plenty of carrots, coconut, and walnuts.


Step 8: Divide the Batter

Divide the batter evenly between the prepared cake pans.

Smooth the tops with a spatula.

Gently tap the pans on the counter once or twice to remove large air pockets.


Step 9: Bake

Place the pans in the preheated oven.

Bake for approximately 28–35 minutes.

The cakes are ready when:

  • The tops spring back lightly when touched.
  • A toothpick inserted into the center comes out clean or with a few moist crumbs.
  • The edges begin pulling slightly away from the pan.

Avoid overbaking because the goal is a moist carrot cake.


Step 10: Cool the Cakes

Remove the pans from the oven.

Allow the cakes to cool in their pans for approximately 10–15 minutes.

Run a knife carefully around the edges.

Turn the cakes onto wire racks and remove the parchment paper.

Allow them to cool completely before frosting.

This is important because cream cheese frosting can melt if spread over warm cake.


🧁 Step 11: Make the Cream Cheese Frosting

Place the softened cream cheese and butter in a large bowl.

Beat until completely smooth and creamy.

Add the powdered sugar gradually.

Mix on low speed initially to prevent powdered sugar from flying everywhere.

Add the vanilla and a pinch of salt.

Beat until fluffy.

If the frosting is too thick, add milk or heavy cream one tablespoon at a time until it reaches a smooth spreading consistency.


Step 12: Assemble the Cake

Place one cooled cake layer on a serving plate.

Spread a generous layer of cream cheese frosting over the top.

Place the second cake layer on top.

Frost the top and sides of the cake.

 

You can create a perfectly smooth finish or leave the frosting slightly rustic for that classic homemade Southern appearance.

Notes

Don’t overmix the batter once the flour is added.

Carrot cake is naturally a little heavier than a traditional vanilla cake because of all the carrots, coconut, and nuts. Overmixing can make it unnecessarily dense.

Also, make sure your baking soda and baking powder are fresh.

Old leavening agents can result in a cake that doesn’t rise properly.

When measuring flour, spoon it into the measuring cup and level it rather than scooping directly from the bag.

 

Too much flour is one of the easiest ways to accidentally create a dry carrot cake.
