  • Author: twiza amys

Ingredients

Scale

For the Casserole

  • 4 cups cooked chicken, shredded
  • 10 corn or flour tortillas
  • 2 cups shredded cheddar cheese
  • 2 cups shredded Monterey Jack cheese
  • 1 can red enchilada sauce
  • 1 cup sour cream
  • 1 can cream of chicken soup
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • 1 teaspoon salt
  • ½ teaspoon black pepper

Optional Ingredients:

  • Black beans
  • Corn
  • Jalapeños
  • Green chilies
  • Cilantro
  • Avocado slices

Recommended Kitchenware:

  • Large casserole dishes
  • Mixing bowls
  • Silicone spatula
  • Nonstick cookware sets
  • Meal prep containers
  • Sharp chef’s knife

Instructions

Step 1: Prepare the Oven and Dish

Preheat your oven to 375°F.

Lightly grease a large casserole dish with cooking spray or olive oil.

Using durable cookware sets and premium casserole dishes helps create evenly baked cheesy casseroles.

Step 2: Prepare the Creamy Enchilada Mixture

In a large mixing bowl, combine enchilada sauce, sour cream, cream of chicken soup, garlic powder, onion powder, cumin, chili powder, salt, and black pepper.

Mix until smooth and creamy.

The sour cream creates rich creamy texture while balancing the bold enchilada flavor perfectly.

Step 3: Layer the Casserole

Spread a small amount of sauce mixture onto the bottom of the casserole dish.

Add a layer of tortillas, followed by shredded chicken, sauce mixture, cheddar cheese, and Monterey Jack cheese.

Repeat the layers until all ingredients are used, finishing with cheese on top.

Layered casseroles create rich flavor while making easy dinners much simpler than traditional rolled enchiladas.

Step 4: Bake Until Bubbling

Bake uncovered for 30 to 35 minutes until the casserole becomes bubbly and the cheese melts into a golden cheesy topping.

For extra golden cheese, broil during the final 2 minutes.

High-quality casserole dishes help distribute heat evenly and improve texture.

Step 5: Rest and Serve

Allow the casserole to rest for 5 to 10 minutes before slicing.

This helps the creamy layers set properly and makes serving easier.

Garnish with cilantro, avocado, or jalapeños if desired.

Notes

  • Rotisserie chicken saves preparation time and adds flavor.
  • Freshly shredded cheese melts more smoothly than packaged cheese.
  • Corn tortillas create more authentic enchilada texture.
  • Durable cookware sets improve baking consistency.
  • Store leftovers in airtight meal prep containers for up to 4 days.

Many home kitchen tips recommend resting casseroles before slicing to help layers stay intact.
