Ingredients
For the Carrot Cake:

- 1 cup granulated sugar
- 1/2 cup brown sugar
- 1 cup vegetable oil
- 4 large eggs (room temperature)
- 2 cups finely grated carrots
- 1 teaspoon vanilla extract
- 1/2 cup crushed pineapple (optional for extra moisture)
- 1/2 cup chopped pecans or walnuts (optional)
For Cream Cheese Frosting:
- 8 oz cream cheese (softened)
- 1/2 cup unsalted butter (softened)
- 3 cups powdered sugar
- 1 teaspoon vanilla extract
For Salted Caramel Sauce:
- 1 cup granulated sugar
- 6 tablespoons butter
- 1/2 cup heavy cream
- 1/2 teaspoon sea salt
Instructions
Preheat oven to 350°F (175°C). Grease and line two or three round cake pans.
In a bowl, whisk together flour, baking soda, salt, cinnamon, and nutmeg.
In a large bowl, mix sugars and oil. Add eggs one at a time, mixing well after each addition. Stir in vanilla.
Fold in grated carrots and pineapple if using. Add nuts if desired.
Gradually add dry ingredients to wet mixture and mix until just combined. Divide batter evenly into pans and bake for 30–35 minutes, or until a toothpick comes out clean.
Let cakes cool fully before assembling to avoid melting frosting.
Beat cream cheese and butter until smooth. Add powdered sugar and vanilla, mixing until creamy.
Melt sugar over medium heat until golden. Add butter carefully, then cream, and finally salt. Stir until smooth and let cool.
Layer cake with cream cheese frosting between each layer. Drizzle salted caramel over each layer and on top.
Notes
Be careful when making caramel—it becomes very hot. Allow it to cool slightly before pouring over the cake to prevent melting the frosting.
