  • 4 large eggs

  • 16 ounces cream cheese, softened
  • 1 cup unsalted butter, softened
  • 5 cups powdered sugar
  • 2 teaspoons vanilla extract

Instructions

Step 1:

Preheat your oven to 350°F (175°C).

Grease and line two 8-inch or 9-inch cake pans with parchment paper.


Step 2:

In a medium bowl, whisk together:

  • Flour
  • Cocoa powder
  • Baking soda
  • Salt

Set aside.


Step 3:

In a large mixing bowl, beat butter and sugar until light and fluffy.

Add eggs one at a time, mixing well after each addition.


Step 4:

Mix in:

  • Vanilla extract
  • Buttermilk
  • Vinegar
  • Red food coloring

Blend until smooth.


Step 5:

Gradually add the dry ingredients to the wet ingredients.

Mix until just combined.

Do not overmix.


Step 6:

Divide batter evenly between cake pans.

Bake for 28–32 minutes or until a toothpick inserted into the center comes out clean.

Cool completely.


Step 7:

Prepare the strawberry filling.

Combine strawberries, sugar, and lemon juice in a saucepan.

Cook over medium heat until strawberries soften.

Mix cornstarch and water together.

Stir into the strawberry mixture.

Cook until thickened.

Cool completely.


Step 8:

Prepare the frosting.

Beat cream cheese and butter until smooth.

Gradually add powdered sugar.

Mix in vanilla extract.

Beat until fluffy and creamy.


Step 9:

Place the first cake layer on a serving plate.

Pipe a frosting border around the edge.

Spread strawberry filling in the center.


Step 10:

Add the second cake layer.

Frost the entire cake with cream cheese frosting.

Smooth the sides and top.


Step 11:

Decorate with fresh strawberries, red velvet crumbs, and white chocolate curls.

Chill for 30 minutes before serving.

Notes

Fresh strawberries provide the best flavor and texture. If using frozen strawberries, thaw and drain excess liquid before making the filling. Allow the filling to cool completely before assembling the cake to prevent the frosting from melting.
