Ingredients
For the Pumpkin Sugar Cookies:
- 1 cup unsalted butter, softened to room temperature

Instructions
Step 1: Prepare the Pumpkin
Preheat the oven to 350°F (175°C). Line two baking sheets with parchment paper or silicone baking mats.
Measure the pumpkin puree and gently blot it with a few layers of paper towel to remove some excess moisture. This step is especially helpful for achieving soft cookies that are not overly cakey.
Do not use pumpkin pie filling. Make sure you are using 100% pure pumpkin puree.
Step 2: Cream the Butter and Sugars
Place the softened butter, granulated sugar, and brown sugar in a large mixing bowl.

Step 8: Scoop the Cookie Dough
Use a cookie scoop or tablespoon to portion the chilled dough.

Step 11: Bake
Place the baking sheets in the preheated oven.

For the best results, use pure pumpkin puree, not pumpkin pie filling. Blotting excess moisture from the pumpkin can help produce a more balanced cookie texture.
Avoid adding too much flour simply because the dough feels soft. Chilling the dough is usually a better solution. Adding excessive flour can make the finished cookies dry and dense.
The cookies are ready when the edges are set and the centers still look slightly soft. They will continue cooking from residual heat after being removed from the oven.
For evenly baked cookies, use a cookie scoop and try to keep all portions approximately the same size.
