For the Creamy Pineapple Topping

- 1/2 cup powdered sugar
- 1 teaspoon vanilla extract
- 1 container (8 ounces) whipped topping, thawed
- 1/2 cup crushed pineapple, well drained
For the Pineapple Topping
- 1 cup crushed pineapple, well drained
- 1/2 cup sweetened shredded coconut, optional
- 1/3 cup chopped pecans or walnuts, optional
- Maraschino cherries, optional, for decoration
Instructions
Preheat your oven to 350°F (175°C).
Grease a 9×13-inch baking pan with nonstick cooking spray or lightly coat it with butter and flour. A 9×13-inch pan works especially well because it creates a nice cake-to-topping ratio and makes the dessert easy to cut into squares.
In a large mixing bowl, combine the yellow cake mix, eggs, vegetable oil, crushed pineapple with its juice, and vanilla extract.
Mix until everything is well combined and the batter is smooth. Do not overmix the batter once the ingredients have been incorporated.
The pineapple juice is important because it helps keep the cake moist and gives the cake its signature tropical flavor.
Pour the pineapple cake batter into the prepared 9×13-inch baking pan.
Use a spatula to spread the batter evenly from corner to corner so the cake bakes uniformly.
Place the cake in the preheated oven and bake for approximately 28–35 minutes, or until the top is lightly golden and a toothpick inserted into the center comes out clean or with a few moist crumbs.
Avoid overbaking the cake. Because this dessert is meant to be soft and moist, baking it too long can make the texture dry.
Remove the cake from the oven and place the pan on a cooling rack.
Allow the cake to cool completely before adding the cream topping. Adding the topping while the cake is still warm can cause the whipped topping and cream cheese mixture to become soft and difficult to spread.
In a medium bowl, beat the softened cream cheese with the powdered sugar and vanilla extract until smooth and creamy.
Make sure the cream cheese is fully softened before mixing. This helps create a smooth topping without lumps.
Gently fold the thawed whipped topping into the cream cheese mixture.
Use a spatula and fold slowly rather than aggressively stirring. This helps keep the topping light and fluffy.
Fold the well-drained crushed pineapple into the cream mixture.
Make sure the pineapple is drained thoroughly. Excess liquid can make the topping watery and prevent it from setting properly.
Once the cake has completely cooled, spread the pineapple cream mixture evenly over the entire surface.
Use an offset spatula or the back of a spoon to create a smooth, even layer.
Sprinkle the top with additional well-drained crushed pineapple.
For extra texture and tropical flavor, add sweetened shredded coconut and chopped pecans or walnuts.
You can also decorate the cake with a few maraschino cherries for a colorful presentation.
Cover the cake tightly with plastic wrap or aluminum foil and refrigerate for at least 2–4 hours.
For the best flavor and texture, refrigerate the Pineapple Cream Dream Cake overnight.
The longer chilling time allows the flavors to blend together and makes the cake easier to slice.
When ready to serve, cut the chilled cake into squares.
Use a clean knife and wipe it between cuts for neat, attractive slices.
Serve cold and garnish individual portions with a small amount of whipped cream, pineapple, coconut, or a cherry if desired.
Notes
The most important cooking note for Pineapple Cream Dream Cake is do not rush the cooling and chilling process.
The cake must be completely cool before the cream topping is added. If the cake is warm, the topping can soften and slide across the surface.
Also, drain the pineapple used in the topping very well. Pineapple contains a significant amount of juice, and excess liquid can make the creamy topping loose.
For the cake batter, however, the pineapple juice should remain with the crushed pineapple because it contributes moisture and flavor to the cake.
For the best results, prepare the dessert several hours before serving. An overnight chill gives the cake an especially soft texture and allows the pineapple and cream flavors to blend together.
Store the finished cake covered in the refrigerator.
