Instructions
Step 1:

Step 2:

Add the cold cubed butter and cut it into the flour mixture using a pastry cutter or your fingers until the texture resembles coarse crumbs.
Step 4:
Pour in the buttermilk and vanilla extract, stirring gently until the dough begins to come together. Fold in the diced peaches carefully to avoid crushing them.
Step 5:
Turn the dough onto a lightly floured surface and gently pat it into a thick rectangle. Fold the dough over itself a few times to create flaky layers, then cut out biscuits using a biscuit cutter.
Step 6:
Place the biscuits on the prepared baking sheet close together for softer sides or spaced apart for crispier edges. Bake for 14–18 minutes or until golden brown.
