  • 2 cups quick-cooking oats

Instructions

Step 1: Prepare the Work Surface

Line two large baking sheets or a clean countertop with parchment paper.

You can also use wax paper or silicone baking mats.

Have a cookie scoop or two tablespoons ready because the praline mixture will need to be portioned while it is still warm.

Step 2: Prepare the Pecans

If desired, lightly toast the chopped pecans before beginning the recipe.

Place the pecans in a dry skillet over medium-low heat and toast for approximately 3–5 minutes, stirring frequently.

Remove them from the heat as soon as they become fragrant.

Allow them to cool slightly.

Toasting is optional, but it brings out the natural buttery flavor of the pecans and adds extra depth to the finished cookies.

Step 3: Combine the Sugar Ingredients

Place the granulated sugar, brown sugar, butter, evaporated milk, and salt into a medium or large heavy-bottomed saucepan.

Step 4: Heat the Praline Mixture

Place the saucepan over medium heat.

Stir frequently as the butter melts and the sugars dissolve into the milk.

Step 5: Add the Vanilla

Step 9: Shape the Cookies

While the mixture is still warm, gently flatten or shape each portion if desired.

You can create round, rustic cookie shapes.

For a more decorative presentation, press a pecan half or a few dried cranberries onto the top of each cookie.

Step 10: Add Flaky Salt

For a sweet-and-salty praline flavor, sprinkle a tiny amount of flaky sea salt over the cookies while they’re still warm.

Step 11: Allow the Cookies to Set

A candy thermometer can provide more consistent results. The exact temperature depends on the desired final texture and the specific praline-style recipe, but the mixture should reach the appropriate candy stage before the oats and other ingredients are added.

Avoid turning the heat too high. Medium heat gives the sugars time to dissolve while reducing the chance of scorching.

Stir frequently while the mixture heats.

Once the sugar mixture reaches a boil, keep a close eye on it.

Humidity can also affect no-bake candy recipes. On very humid days, the cookies may take longer to set.
