Ingredients
- 2 cups white chocolate chips or white chocolate melting wafers
- 1/2 cup creamy peanut butter
- 3 cups crispy rice cereal
- 1 cup mini marshmallows
- 1/2 cup mini semisweet chocolate chips
Instructions
Line a large baking sheet or tray with parchment paper or wax paper. Make sure the tray is large enough to hold approximately 24–30 clusters without allowing them to touch.
Measure the crispy rice cereal, mini marshmallows, and mini chocolate chips before beginning. Having everything ready is helpful because the melted chocolate mixture can begin to thicken as it cools.
If you are preparing these treats for Christmas, you can also set aside a few extra mini chocolate chips or festive decorations to sprinkle over the clusters before they set.
Step 2: Melt the White Chocolate and Peanut Butter
Place the white chocolate chips or melting wafers in a large microwave-safe bowl. Microwave in 20–30-second intervals, stirring thoroughly between each interval until the chocolate is mostly melted.
Add the creamy peanut butter and continue stirring until the mixture becomes completely smooth and glossy.
If the chocolate is not fully melted, return the bowl to the microwave for another short interval. Avoid overheating because white chocolate can scorch or become thick and grainy.
You can also melt the white chocolate using a double boiler. Place it in a heatproof bowl over a saucepan of gently simmering water, making sure the bottom of the bowl does not touch the water. Stir until smooth, then mix in the peanut butter.
Step 3: Fold in the Crispy Rice Cereal
Add the crispy rice cereal to the melted white chocolate and peanut butter mixture.
Using a silicone spatula, gently fold everything together until the cereal is evenly coated. Scrape the sides and bottom of the bowl to make sure no dry cereal remains.
Work gently to avoid crushing the cereal. You want to preserve its light, crispy texture so the finished clusters have plenty of crunch.
If the mixture looks too thick to stir easily, let it sit for a minute or two at room temperature. Avoid adding extra liquid because it can affect how the clusters set.
Step 4: Add the Marshmallows and Chocolate Chips
Allow the mixture to cool slightly before adding the mini marshmallows and mini chocolate chips.
Fold them in gently until they are distributed throughout the cereal mixture. The marshmallows should remain mostly intact, creating soft little pockets in every bite.
If the chocolate mixture is still very warm, the marshmallows may begin to melt and the chocolate chips may lose their shape. A brief cooling period helps preserve their texture.
Step 5: Shape and Chill the Clusters
Using a tablespoon or small cookie scoop, drop portions of the mixture onto the prepared parchment-lined baking sheet.
Shape each portion into a small mound, pressing gently if necessary to help it hold together. Leave a little space between each cluster.
If desired, press a few extra mini chocolate chips or marshmallows onto the tops before the mixture sets.
Place the tray in the refrigerator for approximately 20–30 minutes, or until the clusters are firm. Once set, transfer them to an airtight container and store them in a cool place or in the refrigerator.
Allow refrigerated clusters to sit at room temperature briefly before serving for a softer, creamier bite.
Notes
Melt the white chocolate gently. White chocolate is sensitive to heat, so use short microwave intervals and stir frequently.
Use creamy peanut butter. It creates a smooth mixture that coats the cereal evenly.
Let the chocolate cool before adding marshmallows. This helps keep the marshmallows soft and intact.
Add chocolate chips near the end. If the mixture is too warm, the mini chocolate chips may melt.
Fold gently. Stir carefully to avoid crushing the crispy rice cereal.
Use parchment paper. This prevents sticking and makes it easy to remove the finished clusters.
Keep portions consistent. A small cookie scoop helps create evenly sized treats that chill at the same rate.
Allow enough chilling time. The clusters need to become firm before being moved into a storage container.
