Low Carb 3-Ingredient Pecan Pie Bites – Easy Keto Recipe

  • Author: twiza amys

Ingredients

Scale
  • 1 cup pecan halves or coarsely chopped pecans
  • 3 tablespoons unsalted butter, melted
  • 1/4 cup brown-sugar-style granulated low-carb sweetener

Instructions

Step 1: Prepare the Pecans

Place the pecans on a cutting board and chop them into small pieces if they are not already chopped. Smaller pieces help the melted butter and sweetener coat the nuts more evenly and make the bites easier to shape.

If you want a deeper pecan flavor, lightly toast the nuts in a dry skillet over medium-low heat for approximately 3–5 minutes, stirring frequently. Remove them from the pan as soon as they become fragrant and allow them to cool slightly.

Toasting is optional, but it can enhance the nutty aroma and make the finished bites taste more like a rich pecan dessert.

Prepare a small baking sheet or plate by lining it with parchment paper. Having the tray ready before mixing makes it easier to portion the sticky mixture.

Step 2: Combine the Butter and Sweetener

Place the melted butter in a medium mixing bowl. Add the brown-sugar-style low-carb sweetener and stir until evenly combined.

The mixture should look glossy and slightly grainy, depending on the type of sweetener used. If the sweetener forms large clumps, break them up with the back of a spoon before adding the pecans.

Let the butter cool briefly if it is very hot. Adding the pecans to excessively hot butter can make the mixture difficult to handle and may cause some sweeteners to dissolve unevenly.

Step 3: Add the Pecans

Add the chopped pecans to the butter and sweetener mixture. Stir thoroughly until the nuts are evenly coated.

Make sure you scrape the bottom and sides of the bowl so the sweetener and butter are distributed throughout the pecans.

The mixture should hold together loosely when pressed between your fingers. If it appears very oily, allow it to cool for a few minutes before shaping. If your chosen sweetener remains grainy, that is normal for some low-carb products.

Step 4: Shape the Bites

Use a small cookie scoop or tablespoon to portion the mixture into 12–16 small mounds.

Press each portion firmly between your fingers or into the scoop to help the nuts hold together. Place the shaped bites on the parchment-lined tray, leaving a little space between them.

If the mixture is too loose to hold its shape, refrigerate it for 10–15 minutes before shaping. Chilling helps the butter firm up and makes the mixture easier to handle.

For a more compact, candy-like result, press the mixture into a small silicone candy mold or mini muffin pan lined with paper cups.

Step 5: Chill or Bake Until Set

For a no-bake version, place the tray in the refrigerator for approximately 30–45 minutes, or until the butter has firmed and the bites hold their shape.

If you prefer a more toasted, caramel-like flavor, preheat your oven to 325°F and bake the shaped bites for approximately 8–10 minutes on a parchment-lined baking sheet. Watch carefully, because pecans can burn quickly and some low-carb sweeteners do not caramelize like regular sugar.

Allow baked bites to cool completely before handling. Some sweeteners can become firmer or more brittle as they cool, so avoid moving the bites while they are still warm.

Once set, transfer the bites to an airtight container and refrigerate until serving.

Notes

Choose your sweetener carefully. Brown-sugar-style low-carb sweeteners vary in sweetness and texture. Use the quantity recommended for a similar sweetness to brown sugar.

Avoid overheating the pecans. Pecans contain natural oils and can burn quickly. Toast them gently and stir frequently.

Allow the mixture to cool before shaping. Warm butter can make the bites greasy and difficult to form.

Press the mixture firmly. Since the recipe contains no flour or traditional syrup, compacting the nuts helps the bites stay together.

Use parchment paper. This helps prevent sticking and makes it easier to lift the set bites from the tray.

Chill thoroughly. The butter needs time to firm up so the bites hold their shape.

Be careful with baking. Some sugar substitutes behave differently from regular sugar. Short baking times and close monitoring help prevent burning.

Store in the refrigerator. The butter-based mixture is more stable when chilled, especially in warm conditions.
