  • 2 cups graham cracker crumbs
  • ½ cup unsalted butter, melted
  • ¼ cup granulated sugar

🥥 For the Coconut Cream Filling

  • 1 package (3.4 oz) instant coconut cream pudding mix
  • 1½ cups cold milk
  • 1 can (14 oz) sweetened condensed milk
  • 8 ounces cream cheese, softened
  • 1 teaspoon vanilla extract
  • 1 cup sweetened shredded coconut

  • 1 container (8 oz) whipped topping, thawed
  • ½ cup toasted shredded coconut

Instructions

Step 1: Prepare the Crust

In a medium bowl, combine:

  • Graham cracker crumbs
  • Melted butter
  • Sugar

Mix until evenly moistened.

Press firmly into the bottom of a 9×13-inch baking dish.

Refrigerate for 20 minutes to firm up.


Step 2: Make the Coconut Cream Filling

In a large bowl, beat softened cream cheese until smooth.

Add:

  • Sweetened condensed milk
  • Vanilla extract

Mix until creamy.

In a separate bowl, whisk together:

  • Coconut cream pudding mix
  • Cold milk

Allow it to thicken slightly.

Fold the pudding mixture into the cream cheese mixture.

Stir in shredded coconut.


Step 3: Assemble the Bars

Spread the coconut cream filling evenly over the chilled crust.

Smooth the top using a spatula.

Place the dish in the refrigerator for 30 minutes.

This helps the filling begin to set.


Step 4: Add the Topping

Spread whipped topping evenly over the coconut layer.

Sprinkle generously with toasted coconut.

Add any additional garnishes if desired.


Step 5: Chill and Serve

Cover and refrigerate for at least 4 hours, preferably overnight.

Slice into bars and serve chilled.

 

The bars will cut more cleanly once fully chilled.
