Instructions
Begin by preparing the crust. Add the graham cracker crumbs, granulated sugar, and melted butter to a medium bowl.
Stir thoroughly until all the crumbs are evenly coated with butter and the mixture resembles wet sand.
The melted butter helps bind the graham cracker crumbs together and creates a firm, buttery crust once chilled.
Transfer the graham cracker mixture to a 9-inch pie dish or 9-inch springform pan.
Use the bottom of a measuring cup, glass, or spoon to firmly press the crumbs into an even layer across the bottom of the pan.
For a slightly thicker crust, press some of the crumbs about 1 inch up the sides of the pan.
Place the crust in the refrigerator while preparing the cheesecake filling.
Drain the crushed pineapple extremely well.
This is an important step because excess pineapple juice can make the cheesecake filling too loose.
Place the crushed pineapple in a fine-mesh strainer and press gently with the back of a spoon to remove as much liquid as possible.
Reserve about 2 tablespoons of the pineapple juice for the filling.
Place the softened cream cheese in a large mixing bowl.
Beat with an electric mixer on medium speed until the cream cheese becomes smooth and creamy with no visible lumps.
Using room-temperature cream cheese makes it much easier to achieve a smooth cheesecake filling.
Gradually add the powdered sugar to the softened cream cheese.
Continue mixing until the sugar is completely incorporated and the mixture is smooth.
Scrape down the sides of the bowl as needed to make sure everything is evenly combined.
Add the vanilla extract and reserved pineapple juice.
If using lemon juice, add it at this stage as well.
Mix until everything is thoroughly combined.
The small amount of lemon juice helps balance the sweetness and adds a subtle fresh flavor without overpowering the pineapple.
Add the well-drained crushed pineapple to the cream cheese mixture.
Use a spatula to gently fold the pineapple into the filling.
Do not overmix. You want the crushed pineapple to remain evenly distributed throughout the creamy cheesecake mixture.
Add the thawed whipped topping.
Gently fold it into the pineapple cream cheese mixture until the filling becomes light, fluffy, and evenly combined.
Avoid vigorous mixing because folding helps maintain the airy texture of the whipped topping.
If you want an extra tropical flavor, gently fold in 1/2 cup of sweetened shredded coconut.
Coconut is optional, but it works beautifully with pineapple and gives the cheesecake a classic Hawaiian-inspired flavor.
Remove the chilled graham cracker crust from the refrigerator.
Spoon the pineapple cheesecake filling over the crust.
Use a spatula to gently spread the filling into an even layer.
Smooth the top for a clean finish.
Cover the cheesecake with plastic wrap or aluminum foil.
Refrigerate for at least 6 hours, preferably overnight.
The longer chilling time allows the filling to become firmer and makes the cheesecake easier to slice.
For the best texture, overnight chilling is recommended.
Before serving, decorate the top with whipped cream, pineapple pieces, shredded coconut, or maraschino cherries.
You can also sprinkle a few graham cracker crumbs over the top for extra texture.
Use a sharp knife to cut the cheesecake into slices.
For cleaner slices, wipe the knife with a warm, damp towel between cuts.
Serve chilled and enjoy!
Notes
This is a no-bake cheesecake, so proper chilling is essential. The cheesecake does not become firm immediately after mixing. It needs several hours in the refrigerator for the cream cheese and whipped topping mixture to develop a sliceable texture.
The most important preparation tip is to drain the crushed pineapple very well. Pineapple naturally contains a significant amount of liquid, and excess juice can prevent the cheesecake from setting properly.
For the smoothest filling, always allow the cream cheese to soften at room temperature before mixing.
For the best results, prepare the cheesecake the day before serving and refrigerate it overnight.
If you want particularly neat slices, you can place the chilled cheesecake in the freezer for approximately 20–30 minutes before slicing. Do not freeze it completely unless you are intentionally making a frozen dessert.
