  • 1 1/2 cups semi-sweet chocolate chunks
  • 3/4 cup soft caramel candies, chopped into small pieces

Instructions

Step 1: Prepare the Baking Sheets

Preheat your oven to 350°F (175°C). Line two large baking sheets with parchment paper or silicone baking mats.

Using parchment helps prevent the caramel from sticking directly to the pan and makes cleanup easier.


Step 2: Cream the Butter and Sugars

Place the softened butter, brown sugar, and granulated sugar in a large mixing bowl.

Beat with an electric mixer for approximately 2–3 minutes, until the mixture becomes creamy, smooth, and slightly fluffy.

Properly creaming the butter and sugar helps create cookies with a soft texture and attractive edges.


Step 3: Add the Eggs and Vanilla

Add the eggs one at a time, mixing well after each addition.

Add the vanilla extract and mix until everything is fully incorporated.

Scrape down the sides of the bowl with a spatula to make sure the ingredients are evenly combined.

Step 10: Add Extra Chocolate

Press a few reserved chocolate chunks onto the tops of each dough ball.

Notes

The most important detail when making Gooey Caramel Chocolate Chunk Cookies is not to overbake them.

The centers should look slightly underdone when the cookies come out of the oven. As they cool on the baking sheet, they will continue to set.

For the best caramel texture, use soft caramel candies that are suitable for baking. Cut the caramel into relatively small pieces so it melts into pockets rather than escaping completely from the cookie.

If caramel leaks onto the parchment during baking, allow it to cool before moving the cookies. The caramel will firm up as it cools, making the cookies easier to remove.
