Description

These Glazed Buttermilk Beignet Squares take the traditional French-inspired pastry and give it a rich Southern twist by incorporating tangy buttermilk and a smooth sugary glaze.

For the Dough:

  • 3 ½ cups all-purpose flour
  • 1/4 cup granulated sugar
  • 2 1/4 teaspoons active dry yeast
  • 1 cup warm buttermilk
  • 2 large eggs
  • 4 tablespoons unsalted butter (melted)
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon salt
  • Vegetable oil (for frying)

For the Glaze:

  • 2 cups powdered sugar
  • 34 tablespoons milk or buttermilk
  • 1 teaspoon vanilla extract

Instructions

Step 1:
In a small bowl, combine warm buttermilk and yeast. Let it sit for 5–10 minutes until foamy. This activates the yeast.

Step 2:
In a large mixing bowl, whisk together sugar, eggs, melted butter, and vanilla extract. Add the yeast mixture and stir well.

Step 3:
Gradually add flour and salt, mixing until a soft dough forms. Knead the dough for about 8–10 minutes until smooth and elastic.

Step 4:
Place the dough in a lightly greased bowl, cover with a clean towel, and let it rise in a warm place for 1–2 hours, or until doubled in size.

Step 5:
Punch down the dough and roll it out on a floured surface to about 1/4-inch thickness. Cut into small squares.

Step 6:
Heat oil in a deep pan to 350°F (175°C). Fry the dough squares in batches for 1–2 minutes per side until golden brown.

Step 7:
Remove from oil and place on paper towels to drain excess oil.

Step 8:
In a bowl, whisk together powdered sugar, milk, and vanilla to make the glaze.

Step 9:
Dip warm beignet squares into the glaze or drizzle glaze over them.

Step 10:
Serve immediately while warm and enjoy!
