Instructions
Step 1: Prepare the Oven
Preheat your oven to 350°F (175°C).
Line two large baking sheets with parchment paper or silicone baking mats.
Parchment paper is especially helpful when baking cookies containing caramel because melted caramel can become sticky.
Step 2: Prepare the Apples
Peel, core, and finely dice the apple.
For cookies, small pieces work best because they distribute more evenly throughout the dough and make the cookies easier to eat.
After dicing the apple, gently pat the pieces with a paper towel if they are especially juicy. Removing some excess moisture helps prevent the cookie dough from becoming too wet.
Set the prepared apple aside.
Step 3: Toast the Pecans
For the best flavor, lightly toast the pecans before adding them to the dough.
Spread the chopped pecans on a baking sheet and toast them for approximately 5–7 minutes.
Watch them carefully because nuts can burn quickly.
Allow them to cool before adding them to the cookie dough.
Toasting brings out the natural buttery flavor of the pecans and gives these apple pecan cookies a much richer taste.
Step 4: Combine the Dry Ingredients
In a medium bowl, whisk together:
- All-purpose flour
- Baking soda
- Baking powder
- Salt
- Cinnamon
- Nutmeg
- Cloves
Whisk until the spices and leavening ingredients are evenly distributed.
Set the dry mixture aside.
Step 5: Cream the Butter and Sugars
In a large mixing bowl, beat the softened butter, brown sugar, and granulated sugar together until light, creamy, and fluffy.
This usually takes about 2–3 minutes using an electric mixer.
The brown sugar adds moisture and chewiness while the granulated sugar helps create lightly crisp edges.
Step 6: Add the Eggs and Vanilla
Add the eggs one at a time, beating well after each addition.
Add the vanilla extract and mix until smooth.
Scrape down the sides of the bowl to make sure all ingredients are evenly incorporated.
Step 7: Add the Dry Ingredients
Gradually add the dry ingredients to the butter mixture.
Mix on low speed just until the flour is incorporated.
Do not overmix the dough. Overmixing can make cookies tough instead of soft and chewy.
Step 8: Add the Apples, Pecans, and Caramel
Gently fold in the diced apples, toasted pecans, and caramel bits.
If using rolled oats, add them at this stage as well.
Use a sturdy spatula or wooden spoon and mix gently until everything is evenly distributed.
The finished dough should be thick and packed with apples, caramel, and pecans.
Step 9: Chill the Dough
For thicker, chewier Fall Caramel Apple Pecan Cookies, refrigerate the dough for approximately 30–45 minutes.
This is particularly helpful if the dough feels soft or your kitchen is warm.
Chilling helps prevent excessive spreading during baking and allows the flavors to develop.
Step 10: Scoop the Cookie Dough
Use a cookie scoop or tablespoon to portion the dough into balls approximately 2 tablespoons each.
Place the dough balls onto the prepared baking sheets, leaving approximately 2 inches between them.
The cookies will spread as they bake.
Step 11: Add Extra Toppings
For a bakery-style appearance, gently press a few additional caramel pieces and chopped pecans onto the tops of each dough ball.
This ensures that the finished cookies have plenty of visible caramel and pecans on top.
Step 12: Bake
Bake the cookies for approximately 10–13 minutes.
The edges should be lightly golden and set while the centers should still look slightly soft.
Do not wait until the centers are completely firm. The cookies will continue cooking on the hot baking sheet after being removed from the oven.
Step 13: Add Finishing Touches
Immediately after removing the cookies from the oven, you can gently press a few extra pecan pieces or caramel bits onto the surface.
For a salted caramel flavor, sprinkle a tiny amount of flaky sea salt over the warm cookies.
You can also drizzle them with a little caramel sauce after they have cooled.
Step 14: Cool
Let the cookies cool on the baking sheet for approximately 5–7 minutes.
This allows the caramel to cool slightly and gives the cookies time to set.
Transfer them to a wire cooling rack and allow them to cool completely.
For the softest experience, enjoy one while it is still slightly warm.
Notes
The type of apple you use can make a noticeable difference in the finished cookies.
Firm apples such as Granny Smith, Honeycrisp, Pink Lady, Braeburn, or Fuji work particularly well. Avoid very soft apples because they can release too much moisture into the cookie dough.
Cut the apples into small, even pieces. Large apple chunks can make the cookies difficult to shape and may cause excess moisture.
Caramel pieces can become extremely hot during baking. Allow the cookies to cool for several minutes before eating.
Do not overbake the cookies. The centers should look slightly underdone when you remove them from the oven. They will continue cooking as they cool on the baking sheet.
If the cookie dough seems too soft, refrigerate it longer. The apples can add moisture to the dough, so chilling is particularly helpful with this recipe.
For the best texture, use softened rather than melted butter. Melted butter can cause the cookies to spread more than desired.
