Description

This dessert is especially wonderful during warm weather because it can be prepared ahead of time and served chilled. It doesn’t require complicated techniques, expensive ingredients, or hours in the kitchen.

For the Crust

  • 2 cups graham cracker crumbs
  • ½ cup unsalted butter, melted
  • 2 tablespoons granulated sugar
  • ½ cup sweetened shredded coconut

For the Creamy Filling

  • 8 ounces cream cheese, softened
  • ½ cup granulated sugar
  • 1 teaspoon vanilla extract
  • 1 can sweetened condensed milk, 14 ounces
  • 1 can crushed pineapple, 20 ounces, well drained
  • 1 cup sweetened shredded coconut
  • 8 ounces whipped topping, thawed

For the Topping

 

  • 1 cup whipped topping
  • ½ cup shredded coconut
  • Pineapple chunks or tidbits
  • Maraschino cherries, optional
  • Toasted coconut, optional

Instructions

Step 1: Prepare the Crust

In a medium bowl, combine the graham cracker crumbs, melted butter, sugar, and shredded coconut.

Stir until the crumbs are evenly moistened and the mixture resembles wet sand.

Press the mixture firmly into the bottom of a 9×13-inch baking dish.

Use the bottom of a measuring cup or glass to create an even layer.

Place the crust in the refrigerator while preparing the filling.


Step 2: Prepare the Cream Cheese

Place the softened cream cheese in a large mixing bowl.

Beat until completely smooth and creamy.

Add the granulated sugar and vanilla extract.

Continue mixing until the mixture becomes light and fluffy.

Make sure the cream cheese is properly softened before mixing. Cold cream cheese can leave small lumps in the filling.


Step 3: Add the Sweetened Condensed Milk

Slowly pour in the sweetened condensed milk while mixing.

Continue beating until smooth.

The mixture should become creamy and glossy.

The condensed milk provides sweetness and gives the filling a rich, silky texture.


Step 4: Add the Pineapple

Drain the crushed pineapple extremely well.

This step is important.

Excess pineapple juice can make the filling too loose.

Once drained, gently fold the pineapple into the cream cheese mixture.


Step 5: Add the Coconut

Fold in the shredded coconut.

Stir gently until evenly distributed.

The coconut gives the dessert a delicious chewy texture and enhances the tropical flavor.


Step 6: Fold in the Whipped Topping

Add the whipped topping.

Using a rubber spatula, gently fold it into the mixture.

Don’t vigorously stir because you want to maintain the light, fluffy texture.


Step 7: Add the Filling

Remove the chilled crust from the refrigerator.

Spoon the pineapple-coconut filling over the crust.

Spread it evenly from corner to corner.

Smooth the top with a spatula.


Step 8: Add the Topping

Spread the remaining whipped topping over the dessert.

Sprinkle shredded coconut generously over the top.

For an extra tropical appearance, decorate with:

  • Pineapple chunks
  • Toasted coconut
  • Maraschino cherries
  • Lime zest

Step 9: Chill

Cover the baking dish tightly with plastic wrap.

Refrigerate for at least 4 hours.

For the best texture, refrigerate overnight.

The chilling time allows the layers to firm up and makes the dessert much easier to slice.


Step 10: Slice and Serve

Once completely chilled, cut the dessert into squares.

Use a sharp knife and wipe it clean between cuts for neat slices.

Serve cold.

For an extra-special presentation, top each serving with a small pineapple wedge and a sprinkle of toasted coconut.

Notes

The most important step in this recipe is draining the pineapple thoroughly.

Pineapple contains a lot of liquid, and excess juice can prevent the filling from setting properly.

You can place the crushed pineapple in a fine-mesh strainer and press it gently with the back of a spoon.

Don’t completely crush it into a dry paste—you simply want to remove excess liquid.

Another important step is using softened cream cheese.

Allow it to sit at room temperature for approximately 30–45 minutes before mixing.

This creates a much smoother filling.

Finally, don’t rush the chilling time.

 

The dessert needs several hours in the refrigerator to firm up.
