  • 4 medium apples, peeled, cored, and finely diced

  • Vegetable oil or neutral frying oil, enough for about 1½ inches in the skillet

  • Cinnamon sugar
  • Vanilla glaze

Instructions

Step 1: Prepare the Apple Filling

Peel and core the apples.

Dice them into small pieces so the filling cooks evenly and fits comfortably inside each hand pie.

Place the apples in a saucepan over medium heat.

Add brown sugar, butter, cinnamon, nutmeg, lemon juice, and water.

Cook for approximately 8–12 minutes, stirring occasionally, until the apples become tender and the mixture thickens.

Stir in vanilla extract during the final minute.

The filling should be moist but not watery.

If there is excess liquid, continue cooking for another minute or two until it evaporates.

Remove from the heat and allow the filling to cool completely.

Using firm apples helps prevent the filling from becoming mushy.

Granny Smith apples provide a pleasantly tart contrast, while Honeycrisp, Gala, or Fuji apples create a sweeter filling.


Step 2: Make the Pastry Dough

In a large mixing bowl, combine flour, salt, and sugar.

Add the cold butter and shortening.

Using a pastry cutter, work the fats into the flour until the mixture resembles coarse crumbs with some small pieces of butter remaining.

Gradually add cold water, one tablespoon at a time, stirring gently until the dough begins to come together.

Avoid adding too much water.

The dough should be soft enough to roll but not sticky.

Form the dough into a disk.

Wrap it and refrigerate for approximately 20–30 minutes.

Keeping the dough cold helps create a flaky pastry.


Step 3: Roll and Fill the Pies

Lightly flour your work surface.

Divide the chilled dough into approximately 10–12 equal portions.

Roll each portion into a thin circle approximately 5–6 inches wide.

Place a spoonful of cooled apple filling in the center.

Avoid overfilling because excess filling can make the pies difficult to seal.

Fold the dough over the filling to create a half-moon shape.

Press the edges firmly together.

Use a fork to crimp the edges and create a decorative seal.

Repeat with the remaining dough and filling.

Place the finished pies on a parchment-lined tray while preparing the oil.


Step 4: Fry the Apple Pies

Pour approximately 1½ inches of neutral oil into a heavy-bottomed skillet or Dutch oven.

Heat the oil to approximately 350°F (175°C).

A cooking thermometer is highly recommended because maintaining the proper oil temperature is one of the most important steps.

Carefully place a few pies into the hot oil.

Don’t overcrowd the pan.

Fry for approximately 2–3 minutes per side, or until deeply golden brown.

Use a slotted spoon or cooking tool to carefully turn the pies.

Once golden, transfer them to a cooling rack lined underneath with paper towels to absorb excess oil.

Allow the oil to return to approximately 350°F before frying the next batch.

Step 5: Finish and Serve

Allow the fried apple pies to cool for several minutes.

Notes

The apple filling must be cooled before filling the pastry. Warm filling can soften the dough and make sealing difficult.

Don’t overfill the pies. A modest amount of filling makes them easier to seal and reduces the chance of leaking during frying.

Keep the pastry cold. If the dough becomes soft while you’re working, refrigerate it for several minutes before continuing.

Oil temperature is extremely important. Oil that’s too cool can make the pies greasy, while oil that’s too hot can brown the pastry before the filling becomes properly heated.

Fry in small batches to maintain consistent oil temperature.

Always use caution when working with hot oil and keep the cooking area clear.
