Crockpot Lil’ Smokies with Beans and Potatoes – Easy Hearty Slow Cooker Meal

  • 2 packages (14 oz each) Lil’ Smokies smoked sausages

  • 4 medium potatoes, diced

  • 1 can (15 oz) kidney beans, drained and rinsed

  • 1 can (15 oz) pinto beans, drained and rinsed

  • 1 small onion, diced

  • 3 cloves garlic, minced

  • 2 cups chicken broth

  • 1 can (14.5 oz) diced tomatoes, undrained

  • 1 tablespoon olive oil

  • 1 teaspoon smoked paprika

  • ½ teaspoon black pepper

  • ½ teaspoon salt (adjust to taste)

  • 1 teaspoon garlic powder

  • 1 teaspoon onion powder

  • Optional garnish: chopped parsley or green onions


Instructions

Step 1:

Lightly grease the inside of your crockpot with cooking spray or a small amount of olive oil.

Step 2:

Add diced potatoes to the bottom of the slow cooker. Spread them evenly to form the base layer.

Step 3:

Add kidney beans, pinto beans, diced onion, and minced garlic over the potatoes.

Step 4:

Add the Lil’ Smokies on top. Pour in chicken broth and diced tomatoes, then sprinkle paprika, garlic powder, onion powder, salt, and black pepper over everything.

Step 5:

 

Cover and cook on LOW for 6–7 hours or HIGH for 3–4 hours, until potatoes are tender and flavors are well blended. Stir gently before serving.

Notes

Cut potatoes into evenly sized cubes to ensure they cook at the same rate and become tender without falling apart.
