Crispy Malibu Chicken is a delicious comfort food classic that combines juicy breaded chicken with savory ham and perfectly melted cheese. Inspired by the popular restaurant-style dish, this recipe delivers a crispy golden crust on the outside and a rich, cheesy, flavorful center inside.
Ingredients
- 4 boneless, skinless chicken breasts
- 8 slices deli ham
- 4 slices Swiss cheese (or mozzarella)
- 1 cup all-purpose flour
- 2 eggs (beaten)
- 1 1/2 cups breadcrumbs (or panko)
- 1/2 teaspoon garlic powder
- 1/2 teaspoon paprika
- Salt and black pepper to taste
- 1/2 cup oil (for frying)
Optional Sauce:
- 1/2 cup mayonnaise
- 2 tablespoons Dijon mustard
- 1 tablespoon honey
Instructions
Pound chicken breasts to even thickness. Season with salt, pepper, garlic powder, and paprika.
Place slices of ham and cheese on top of each chicken breast. Fold or roll to secure (use toothpicks if needed).
Dredge chicken in flour, dip in beaten eggs, then coat in breadcrumbs.
Heat oil in a skillet over medium heat. Fry chicken for 4–5 minutes per side until golden and crispy.
Transfer to oven and bake at 375°F (190°C) for 10–15 minutes until chicken is fully cooked and cheese is melted.
Mix mayonnaise, Dijon mustard, and honey until smooth.
Serve hot with sauce drizzled or on the side.
Notes
Make sure the chicken is sealed well to prevent cheese from leaking out during cooking.
