Ingredients
For the Coconut Filling
- 1 prepared 9-inch graham cracker crust
- 1 package instant coconut cream pudding mix, 3.4 ounces
- 1½ cups cold whole milk
- 1 can sweetened condensed milk, 14 ounces
- 1 teaspoon vanilla extract
- 1 cup sweetened shredded coconut
- 8 ounces cream cheese, softened
- 8 ounces whipped topping, thawed
For the Topping
- 1 cup whipped topping
- ½ cup sweetened shredded coconut
- Toasted coconut flakes, optional
- White chocolate shavings, optional
Instructions
Pour the cold milk into a large mixing bowl.
Add the instant coconut cream pudding mix.
Whisk for approximately 2 minutes, until the mixture begins to thicken.
Allow it to sit for another couple of minutes while preparing the cream cheese mixture.
Using cold milk helps the instant pudding develop the proper consistency.
Place the softened cream cheese in a large bowl.
Beat it with an electric mixer until completely smooth and creamy.
This usually takes approximately 1–2 minutes.
Make sure there are no large lumps before continuing.
Slowly pour the sweetened condensed milk into the softened cream cheese.
Continue mixing until the two ingredients are completely combined.
Add the vanilla extract and mix again.
The mixture should be smooth, creamy, and slightly thick.
Add the prepared coconut pudding to the cream cheese mixture.
Beat on low speed until everything is incorporated.
Avoid overmixing.
The filling should now have a thick, creamy consistency.
Fold the shredded coconut into the filling using a spatula.
Make sure it is evenly distributed.
If you prefer a stronger coconut flavor, you can add an additional ¼ cup of shredded coconut.
Add the whipped topping.
Gently fold it into the coconut mixture.
Don’t stir too aggressively.
Folding helps preserve the light, fluffy texture that makes this pie so delicious.
Spoon the coconut filling into the prepared graham cracker crust.
Spread the top evenly with a spatula.
For a more decorative finish, create soft swirls across the surface.
Place the shredded coconut in a dry skillet over medium-low heat.
Stir frequently.
Toast for approximately 3–5 minutes, or until lightly golden and fragrant.
Watch it carefully because coconut can burn quickly.
Allow the toasted coconut to cool completely.
Spread or pipe additional whipped topping over the pie.
Sprinkle the cooled toasted coconut over the top.
For an elegant presentation, add a few white chocolate curls or coconut flakes.
Cover the pie loosely with plastic wrap.
Refrigerate for at least 4 hours, or preferably overnight.
This chilling time allows the filling to firm up and makes the pie easier to slice.
Once thoroughly chilled, slice the pie with a sharp knife.
For cleaner slices, wipe the knife between cuts.
Serve cold with an extra spoonful of whipped topping and toasted coconut.
Notes
The most important part of this recipe is making sure the filling becomes firm enough to slice.
Use cold milk when preparing the instant pudding and allow the pie plenty of time to chill.
If you try to slice it too soon, the filling may not have set completely.
Softened cream cheese is also important. Cold cream cheese can leave small lumps throughout the filling.
For the smoothest result, let the cream cheese sit at room temperature for approximately 30–45 minutes before mixing.
