  • 8 ounces cream cheese, softened
  • ½ cup powdered sugar
  • 1 teaspoon vanilla extract

For the Blueberry Filling

  • 2 tablespoons granulated sugar
  • 1 tablespoon lemon juice
  • 1 teaspoon cornstarch
  • 1 tablespoon water

For the Cookie Dough

  • 1 cup unsalted butter, softened
  • ¾ cup granulated sugar
  • ¾ cup packed brown sugar
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 2 ¾ cups all-purpose flour
  • 1 teaspoon baking soda
  • ½ teaspoon baking powder
  • ½ teaspoon salt

Optional Add-Ins

  • ½ cup white chocolate chips
  • ½ cup freeze-dried blueberries, crushed
  • 1 teaspoon lemon zest

Instructions

Step 1: Prepare the Cheesecake Filling

Place the softened cream cheese in a mixing bowl.

Add the powdered sugar, vanilla extract, and flour or cornstarch.

Beat until completely smooth and creamy.

The mixture should be thick enough to hold its shape.

Line a small baking sheet or plate with parchment paper.

Scoop approximately 1 tablespoon of the cheesecake filling onto the parchment.

Create approximately 18–20 small portions.

Place the cheesecake portions in the freezer for at least 30–45 minutes, or until firm.

Freezing the filling makes the cookies much easier to assemble.

Step 2: Prepare the Blueberry Filling

Place the blueberries, granulated sugar, and lemon juice in a small saucepan.

Cook over medium heat for approximately 4–6 minutes, stirring occasionally.

As the blueberries heat, gently crush some of them with the back of a spoon.

In a small bowl, mix the cornstarch with the water until smooth.

Pour the cornstarch mixture into the blueberries.

Continue cooking for approximately 1–2 minutes, stirring constantly, until the mixture thickens.

Remove from the heat and allow it to cool completely.

The blueberry mixture should be thick rather than runny.

Step 3: Prepare the Dry Ingredients

In a medium bowl, whisk together:

  • All-purpose flour
  • Baking soda
  • Baking powder
  • Salt

Set aside.

Step 4: Cream the Butter and Sugars

In a large mixing bowl, beat the softened butter, granulated sugar, and brown sugar until light and creamy.

This usually takes approximately 2–3 minutes.

Creaming the butter and sugars properly helps create a soft cookie texture.

Step 5: Add the Eggs and Vanilla

Add the eggs one at a time, mixing well after each addition.

Add the vanilla extract and mix until smooth.

Scrape down the sides of the bowl to ensure all ingredients are evenly incorporated.

Step 6: Add the Dry Ingredients

Gradually add the dry ingredients to the butter mixture.

Mix on low speed just until the flour disappears.

Do not overmix the dough.

The finished cookie dough should be soft but thick enough to handle.

Step 7: Add Optional Ingredients

If desired, fold white chocolate chips, crushed freeze-dried blueberries, or lemon zest into the cookie dough.

White chocolate pairs especially well with blueberries and cream cheese.

Step 8: Chill the Cookie Dough

Cover the bowl and refrigerate the dough for approximately 30 minutes.

Chilling makes the dough easier to handle and helps prevent the cookies from spreading too much during baking.

Step 9: Flatten the Cookie Dough

Scoop approximately 2 tablespoons of dough for each cookie.

Roll it into a ball and gently flatten it into a thick disk.

Place one frozen cheesecake filling portion in the center.

Add approximately ½ teaspoon of cooled blueberry filling over the cheesecake center.

Be careful not to add too much blueberry filling because excess filling can make the cookie difficult to seal.

Step 10: Seal the Cookie

Carefully fold the edges of the cookie dough around the filling.

Pinch the dough together completely so there are no openings.

Roll the filled dough gently between your palms to form a smooth ball.

Make sure the cheesecake and blueberry filling are completely enclosed.

Step 11: Prepare the Baking Sheet

Place the filled cookie dough balls onto a parchment-lined baking sheet.

Leave approximately 2–3 inches of space between each cookie.

If the dough becomes soft while you’re assembling the cookies, place the filled cookie balls in the refrigerator for 10–15 minutes before baking.

Step 12: Bake

Preheat the oven to 350°F (175°C).

Bake the cookies for approximately 11–14 minutes.

The edges should be lightly golden while the centers remain soft.

Avoid overbaking because the cookies will continue to set as they cool.

Step 13: Cool

Allow the cookies to cool on the baking sheet for approximately 10 minutes.

The filling will be extremely hot immediately after baking.

After the cookies have set slightly, carefully transfer them to a wire rack.

Allow them to cool completely.

Step 14: Add Optional Toppings

Once cooled, dust the cookies with powdered sugar.

Add a small amount of fresh lemon zest if desired.

Notes

The cheesecake filling must be firm before you try to stuff the cookies. Freezing the filling is one of the most important steps because it prevents the cream cheese mixture from becoming difficult to handle.

The blueberry filling should also be completely cool before assembling the cookies.

If the blueberry mixture is warm or too thin, it can soften the cheesecake filling and make the cookie dough difficult to seal.

Do not overfill the cookies. A small amount of blueberry filling provides plenty of flavor, and using too much can cause the filling to leak during baking.

Make sure the cookie dough completely surrounds the cheesecake center. Even a small opening can allow the filling to escape.

If your kitchen is warm, work in batches and keep the cheesecake portions and prepared cookie balls refrigerated until you’re ready to bake.
