  • 1 tablespoon lemon zest
  • 4 large egg yolks

Instructions

Step 1: Prepare the Crust

Preheat oven to 350°F (175°C).

In a bowl combine:

  • Graham cracker crumbs
  • Melted butter
  • Sugar

Mix until evenly moistened.

Press firmly into a 9-inch pie dish.

Press crumbs evenly across the bottom and up the sides.

Bake for 8–10 minutes.

Allow the crust to cool completely.


Step 2: Prepare the Lemon Filling

In a large mixing bowl whisk together:

  • Sweetened condensed milk
  • Egg yolks

Mix until smooth.

Add:

  • Lemon juice
  • Lemon zest
  • Vanilla extract

Whisk until fully combined.

The mixture will begin to thicken naturally.


Step 3: Fill the Pie

Pour the lemon mixture into the cooled crust.

Spread evenly using a spatula.

Tap the pie dish gently on the counter to remove air bubbles.


Step 4: Bake the Pie

Bake for 15–18 minutes.

The center should be slightly set but still have a gentle jiggle.

Remove from the oven.

Allow to cool at room temperature.


Step 5: Chill the Pie

Refrigerate for at least 4 hours, preferably overnight.

This allows the filling to fully set and develop flavor.


Step 6: Decorate and Serve

Top with:

  • Lemon slices
  • Lemon zest
