Description
This easy loaf has all the cozy flavors of a classic cake donut but comes together in a simple loaf pan. The inside is soft, tender, and lightly sweet, with warm cinnamon flavor throughout. Once it comes out of the oven, the entire loaf is brushed generously with melted butter and coated in a beautiful layer of cinnamon sugar.
Ingredients
For the Cinnamon Donut Loaf
- 2 cups all-purpose flour
- 1½ teaspoons baking powder
- ½ teaspoon salt
- 1 teaspoon ground cinnamon
- ½ cup unsalted butter, softened
- ¾ cup granulated sugar
- 2 large eggs
- 2 teaspoons vanilla extract
- ¾ cup whole milk
- ¼ cup sour cream or plain Greek yogurt
For the Cinnamon Sugar Coating
- ½ cup granulated sugar
- 1½ teaspoons ground cinnamon
- 5 tablespoons unsalted butter, melted
Instructions
Step 1: Prepare the Oven
Preheat your oven to 350°F (175°C).
Grease a 9×5-inch loaf pan generously with butter or nonstick cooking spray.
For easier removal, line the bottom and two sides with parchment paper.
Step 2: Mix the Dry Ingredients
In a medium bowl, whisk together:
- Flour
- Baking powder
- Salt
- Cinnamon
Mix until the cinnamon is evenly distributed throughout the flour.
Set aside.
Step 3: Cream the Butter and Sugar
In a large mixing bowl, beat the softened butter and sugar together until light and fluffy.
This should take approximately 2–3 minutes with an electric mixer.
Creaming the butter properly helps create a lighter texture.
Step 4: Add the Eggs
Add the eggs one at a time.
Beat well after each addition.
Add the vanilla extract and mix until combined.
The mixture should look smooth and creamy.
Step 5: Combine the Wet and Dry Ingredients
Add approximately one-third of the flour mixture to the butter mixture.
Mix gently.
Add half of the milk and sour cream.
Continue alternating between the dry ingredients and wet ingredients until everything is incorporated.
Begin and finish with the dry ingredients.
Do not overmix.
Stop as soon as the batter is smooth.
Step 6: Fill the Loaf Pan
Transfer the batter to the prepared loaf pan.
Spread it evenly with a spatula.
Gently tap the pan against the counter once or twice to remove large air pockets.
Step 7: Bake
Place the loaf in the preheated oven.
Bake for approximately 45–55 minutes.
The top should be lightly golden and a toothpick inserted into the center should come out with a few moist crumbs.
Avoid overbaking because you want the inside to remain soft and tender.
If the top begins browning too quickly, loosely cover it with aluminum foil during the final 10–15 minutes.
Step 8: Cool Slightly
Remove the loaf from the oven.
Allow it to cool in the pan for approximately 10 minutes.
Then carefully lift it out using the parchment paper.
Place it on a wire rack.
The loaf should still be slightly warm when you apply the cinnamon-sugar coating.
🍩 Step 9: Prepare the Cinnamon Sugar
In a shallow bowl, combine the granulated sugar and cinnamon.
Mix thoroughly.
You want the cinnamon evenly distributed throughout the sugar.

Brush the entire outside of the warm loaf with melted butter.
Make sure you cover the top and sides generously.
The butter helps the cinnamon sugar stick to the loaf while also adding that rich, classic donut flavor.
🍂 Step 11: Coat With Cinnamon Sugar
Immediately sprinkle the cinnamon sugar over the buttered loaf.
Rotate the loaf carefully so all sides are coated.
For an extra thick cinnamon-sugar crust, repeat the butter and cinnamon-sugar coating a second time.
Step 12: Slice and Serve
Allow the coating to set for approximately 10–15 minutes.
Slice the loaf with a sharp serrated knife.
Serve warm or at room temperature.
Notes
The key to a soft Cinnamon Donut Loaf is not overmixing the batter.
Once the flour is added, mix only until the ingredients are combined.
Overmixing can develop too much gluten and make the loaf tough.
It’s also important to measure the flour correctly. Too much flour can result in a dry, dense loaf.
For the most accurate measurement, spoon flour into your measuring cup and level it with a knife rather than scooping directly from the flour bag.
