Ingredients
For the Chicken:
- 4 boneless, skinless chicken breasts
- 2 tablespoons olive oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon Italian seasoning
For the Lemon Butter Sauce:
- 1/2 cup unsalted butter
- 3 cloves garlic (minced)
- 1/2 cup heavy cream
- 1/4 cup white wine (optional)
- 1/4 cup fresh lemon juice
- 1/2 cup sun-dried tomatoes (chopped)
- 1/2 cup grated Parmesan cheese
For Topping:
- 4 slices mozzarella or goat cheese
- Fresh basil (optional)
Instructions
Season chicken breasts with salt, pepper, and Italian seasoning.
Heat olive oil in a skillet over medium heat. Cook chicken for 5–7 minutes per side until golden and fully cooked. Set aside.
In the same pan, melt butter and sauté garlic until fragrant. Add white wine (if using) and let it reduce slightly.
Stir in heavy cream and lemon juice. Let the sauce simmer gently.
Add sun-dried tomatoes and Parmesan cheese. Stir until smooth and creamy.
Return chicken to the pan and spoon sauce over each piece. Add cheese slices on top.
Cover the pan or place in oven briefly until cheese melts.
Notes
Do not boil the sauce after adding cream, as it can separate. Keep it at a gentle simmer.
