Caribbean Sweet Potato Cobbler Pudding

  • Author: iliass
  • Total Time: 1 hour 35 minutes

Description

Caribbean Sweet Potato Cobbler Pudding is the perfect fusion of two beloved comfort desserts: the rich, custard-like texture of traditional Caribbean sweet potato pudding and the buttery, golden topping of a classic Southern cobbler. This irresistible dessert celebrates the bold flavors of the Caribbean with creamy sweet potatoes, rich coconut milk, warm spices, brown sugar, and fragrant vanilla, all baked beneath a tender, buttery cobbler crust that becomes crisp and golden in the oven.

Ingredients

Scale

🍠 For the Sweet Potato Pudding

  • 4 cups cooked and mashed sweet potatoes
  • 1 can (13.5 ounces) full-fat coconut milk
  • 1 cup evaporated milk
  • ¾ cup packed brown sugar
  • ¼ cup granulated sugar
  • 2 large eggs
  • ¼ cup unsalted butter, melted
  • 2 teaspoons vanilla extract
  • 1 teaspoon coconut extract (optional)
  • 1 teaspoon ground cinnamon
  • ½ teaspoon ground nutmeg
  • ½ teaspoon ground ginger
  • ¼ teaspoon ground allspice
  • ¼ teaspoon salt
  • ½ cup raisins (optional)
  • ½ cup sweetened shredded coconut

🥧 For the Cobbler Topping

  • 1½ cups all-purpose flour
  • ½ cup granulated sugar
  • 2 teaspoons baking powder
  • ¼ teaspoon salt
  • ½ teaspoon ground cinnamon
  • ½ cup unsalted butter, melted
  • ½ cup whole milk
  • 1 teaspoon vanilla extract

🍯 Optional Garnishes

  • Toasted coconut flakes
  • Chopped toasted pecans
  • Vanilla ice cream
  • Whipped cream
  • Caramel sauce
  • Fresh grated nutmeg
  • Cinnamon sprinkle

Instructions

Step 1: Prepare the Baking Dish

Preheat the oven to 350°F (175°C).

Grease a 9×13-inch baking dish with butter or nonstick spray.

Step 2: Make the Sweet Potato Pudding

In a large mixing bowl combine:

  • Mashed sweet potatoes
  • Coconut milk
  • Evaporated milk
  • Brown sugar
  • Granulated sugar
  • Eggs
  • Melted butter
  • Vanilla extract
  • Coconut extract
  • Cinnamon
  • Nutmeg
  • Ginger
  • Allspice
  • Salt

Mix until smooth.

Fold in:

  • Raisins
  • Shredded coconut

Spread evenly into the prepared baking dish.

Step 3: Prepare the Cobbler Topping

In another bowl whisk together:

  • Flour
  • Sugar
  • Baking powder
  • Salt
  • Cinnamon

Add:

  • Melted butter
  • Milk
  • Vanilla

Stir until just combined.

Do not overmix.

Step 4: Add the Cobbler Layer

Drop spoonfuls of the cobbler batter over the sweet potato mixture.

Leave small spaces between the batter so the pudding can bubble through during baking.

Step 5: Bake

Bake for 50–60 minutes, or until:

  • The topping is golden brown.
  • The pudding is bubbling around the edges.
  • A toothpick inserted into the cobbler topping comes out clean.

Step 6: Cool Slightly

Allow the cobbler pudding to cool for 15–20 minutes before serving.

The pudding will continue to thicken as it cools.

Step 7: Garnish

Top with:

  • Toasted coconut
  • Toasted pecans
  • Cinnamon
  • Fresh grated nutmeg
  • Caramel drizzle

Step 8: Serve

Serve warm with:

  • Vanilla ice cream
  • Fresh whipped cream
  • Hot caramel sauce

Enjoy every creamy, spiced bite.

Notes

  • Roast or bake sweet potatoes instead of boiling them for a richer flavor.
  • Use full-fat coconut milk for the creamiest texture.
  • Do not overmix the cobbler batter.
  • Allow the pudding to rest before serving.
  • Toast the coconut and pecans for extra flavor.
  • Refrigerate leftovers promptly.
