This isn’t just another sweet potato dessert. The combination of sweet potatoes, brown sugar, cinnamon, butter, and toasted pecans creates an incredible depth of flavor. The sweet potatoes become tender as they bake, while the brown sugar sauce thickens around them and soaks into the cobbler topping.

For the Sweet Potato Filling

  • 3 cups peeled and diced sweet potatoes
  • ¾ cup packed light brown sugar
  • ½ cup granulated sugar
  • ½ cup unsalted butter
  • 1 cup water
  • 1 teaspoon vanilla extract
  • 1 teaspoon ground cinnamon
  • ¼ teaspoon ground nutmeg
  • ¼ teaspoon salt

For the Cobbler Topping

  • 1½ cups all-purpose flour
  • ½ cup granulated sugar
  • 2 teaspoons baking powder
  • ¼ teaspoon salt
  • ½ teaspoon ground cinnamon
  • ½ cup unsalted butter, melted
  • ¾ cup whole milk
  • 1 teaspoon vanilla extract

For the Pecan Topping

  • ¾ cup chopped pecans
  • 2 tablespoons brown sugar
  • 1 tablespoon melted butter
  • ½ teaspoon cinnamon

  • Vanilla ice cream
  • Whipped cream
  • Caramel sauce
  • Extra toasted pecans
  • Light sprinkle of cinnamon

Instructions

Step 1: Prepare the Sweet Potatoes

Preheat your oven to 350°F (175°C).

Peel the sweet potatoes and cut them into small, even pieces.

Try to keep the pieces approximately the same size so they cook evenly.

Place the diced sweet potatoes in a large baking dish.


Step 2: Make the Brown Sugar Sauce

In a saucepan over medium heat, combine:

  • Brown sugar
  • Granulated sugar
  • Butter
  • Water
  • Cinnamon
  • Nutmeg
  • Salt

Stir until the butter has melted and the sugar has dissolved.

Bring the mixture to a gentle simmer.

Cook for approximately 2–3 minutes, stirring occasionally.

Remove from the heat and stir in the vanilla extract.

The sauce should be smooth, buttery, and fragrant.


Step 3: Pour the Sauce Over the Sweet Potatoes

Pour the warm brown sugar mixture evenly over the diced sweet potatoes.

Gently toss or stir to coat the sweet potatoes.

Spread everything evenly throughout the baking dish.

The sweet potatoes should be surrounded by the rich brown sugar sauce.


Step 4: Prepare the Cobbler Batter

In a medium bowl, whisk together:

  • Flour
  • Granulated sugar
  • Baking powder
  • Salt
  • Cinnamon

In another bowl, combine:

  • Melted butter
  • Milk
  • Vanilla extract

Pour the wet ingredients into the dry ingredients.

Stir gently until just combined.

Do not overmix.

The batter should be thick and soft.


Step 5: Add the Cobbler Topping

Carefully spoon the cobbler batter over the sweet potatoes.

You don’t need to completely cover every inch of the surface.

As the cobbler bakes, the topping will spread and puff up.

Leave a few small spaces between the spoonfuls so some of the sweet potato filling can bubble through.


Step 6: Prepare the Brown Sugar Pecans

In a small bowl, combine the chopped pecans, brown sugar, melted butter, and cinnamon.

Stir until the pecans are evenly coated.

Sprinkle the pecan mixture generously over the cobbler batter.

This creates a delicious buttery, caramelized pecan topping.


Step 7: Bake

Place the baking dish in the preheated oven.

Bake for approximately 45–55 minutes.

The cobbler topping should be golden brown and cooked through.

The sweet potato filling should be bubbling around the edges.

If the pecans become too dark before the cobbler is finished, loosely cover the dish with aluminum foil.


Step 8: Let It Rest

Remove the cobbler from the oven.

Allow it to rest for approximately 15–20 minutes before serving.

This gives the brown sugar sauce time to thicken slightly.

The dessert will be extremely hot immediately after baking, so letting it rest also makes it easier to serve.


Step 9: Serve Warm

Spoon the warm cobbler into bowls.

Top each serving with a scoop of vanilla ice cream.

Drizzle with caramel sauce and sprinkle with additional chopped pecans if desired.

 

The ice cream will slowly melt into the warm brown sugar sauce, creating an incredibly rich dessert.

Notes

The biggest secret to a good sweet potato cobbler is getting the sweet potatoes to the right size.

If they’re cut too large, they may still be firm when the cobbler topping is completely baked.

If they’re cut too small, they can become overly soft.

Aim for approximately ½-inch to ¾-inch pieces.

Also, don’t overmix the cobbler batter. A few small lumps are completely fine.

Overmixing can make the topping dense instead of tender.
