Instructions

Step 1: Prepare the Crust

Preheat your oven to 350°F (175°C). In a medium mixing bowl, combine graham cracker crumbs, sugar, and melted butter. Stir until the crumbs are evenly coated and resemble wet sand.

Press the mixture firmly into the bottom and slightly up the sides of a 9-inch pie dish. Use the bottom of a measuring cup to compact the crust evenly.

Bake the crust for 8–10 minutes until lightly golden. Remove from the oven and let it cool slightly.


Step 2: Make the Creamy Filling

In a large bowl, whisk together the sweetened condensed milk and eggs until smooth and creamy.

Add fresh lemon juice, lemon zest, vanilla extract, sour cream, and heavy cream. Continue whisking until the filling becomes silky and fully combined.

The lemon juice naturally thickens the mixture, creating that signature creamy texture.


Step 3: Fill the Pie Crust

Pour the prepared lemon filling into the slightly cooled crust. Spread evenly using a spatula.

Gently tap the pie dish on the counter to remove any trapped air bubbles.


Step 4: Bake the Pie

Place the pie into the oven and bake for 18–22 minutes. The center should still have a slight jiggle but appear mostly set.
