Ingredients
For the Apple Filling
- 4 medium apples, peeled, cored, and finely diced
- ¼ cup packed brown sugar
- 2 tablespoons granulated sugar
- 1 teaspoon ground cinnamon
- ¼ teaspoon ground nutmeg
- 1 teaspoon vanilla extract
- 1 tablespoon lemon juice
- 1 tablespoon all-purpose flour
- Pinch of salt
For the Crisp Topping
- ¾ cup old-fashioned rolled oats
- ½ cup all-purpose flour
- ⅓ cup packed brown sugar
- ½ teaspoon ground cinnamon
- ¼ teaspoon salt
- ½ cup unsalted butter, cold and cubed
- ½ cup chopped pecans or walnuts, optional

- Vanilla ice cream
- Whipped cream
- Caramel sauce
- Powdered sugar
- Chopped toasted pecans
- Ground cinnamon
Instructions
Preheat your oven to 350°F (175°C).
Lightly grease a 12-cup muffin pan with butter or nonstick cooking spray.
For easier removal, you can also use parchment muffin liners.
Peel and core the apples.
Cut them into small, bite-sized cubes. Smaller pieces work particularly well because they cook quickly and fit neatly into the individual portions.
Place the diced apples into a medium mixing bowl.
Add the brown sugar, granulated sugar, cinnamon, nutmeg, vanilla extract, lemon juice, flour, and salt.
Gently toss until all the apple pieces are evenly coated.
The flour will help absorb some of the juices released by the apples during baking and create a thicker filling.
In a separate bowl, combine the rolled oats, flour, brown sugar, cinnamon, and salt.
Add the cold cubed butter.
Using a pastry cutter, fork, or your fingertips, work the butter into the dry ingredients until the mixture resembles coarse crumbs.
If using pecans or walnuts, stir them into the crumble mixture.
Divide the apple mixture evenly among the prepared muffin cups.
Do not pack the apples down too firmly. Leave a little room for the filling to bubble as it cooks.
Spoon the crisp topping generously over each portion.
Press the topping very lightly so it sits securely over the apples.
Place the muffin pan in the preheated oven.
Bake for approximately 25–30 minutes, or until the apples are tender and the crisp topping is golden brown.
You should see some of the apple juices bubbling around the edges.
Remove the pan from the oven and allow the Apple Crisp Bites to cool for approximately 10–15 minutes.
This resting time allows the apple filling to thicken slightly and makes the bites easier to remove from the pan.
Carefully loosen the edges with a small knife or spatula.
Lift each apple crisp bite from the muffin pan and transfer it to a serving plate.
If using paper liners, simply lift the bites out by the liners.
For an extra-indulgent dessert, drizzle warm caramel sauce over each apple crisp bite.

Notes

If your apples are particularly juicy, you can add an extra teaspoon of flour to the filling to help absorb excess liquid.
Be careful not to overfill the muffin cups. The apple mixture will release juices as it cooks, and the filling can bubble over if the cups are too full.
