Description

These little desserts combine tender apples tossed with warm cinnamon and brown sugar with a buttery, golden crumble topping. Each bite gives you that familiar homemade apple crisp flavor in a convenient individual portion.

For the Apple Filling

  • 3 medium apples, peeled, cored, and finely diced
  • 2 tablespoons brown sugar
  • 1 tablespoon granulated sugar
  • 1 teaspoon ground cinnamon
  • ¼ teaspoon ground nutmeg
  • 1 teaspoon lemon juice
  • 1 teaspoon cornstarch
  • 1 teaspoon vanilla extract

For the Crisp Topping

 

  • ¾ cup old-fashioned rolled oats
  • ½ cup all-purpose flour
  • ½ cup brown sugar
  • ½ teaspoon ground cinnamon
  • ¼ teaspoon salt
  • 6 tablespoons unsalted butter, melted
  • ½ cup chopped pecans or walnuts, optional

Instructions

Step 1: Prepare the Oven

Preheat your oven to 350°F (175°C).

Lightly grease a mini muffin pan with nonstick cooking spray or butter.

You can also use a standard muffin pan if you want larger individual portions.


Step 2: Prepare the Apples

Peel and core the apples.

Dice them into very small pieces.

Smaller pieces work particularly well for bite-sized desserts because they cook quickly and fit neatly into the muffin cups.

Place the diced apples in a mixing bowl.


Step 3: Season the Apple Filling

Add the brown sugar, granulated sugar, cinnamon, nutmeg, lemon juice, cornstarch, and vanilla.

Stir gently until all the apples are evenly coated.

The cornstarch helps thicken the juices released by the apples as they bake.

Set the filling aside.


Step 4: Make the Crisp Topping

In another bowl, combine:

  • Rolled oats
  • Flour
  • Brown sugar
  • Cinnamon
  • Salt

Stir everything together.

Pour in the melted butter.

Mix until the ingredients form a crumbly mixture.

If you’re using chopped pecans or walnuts, stir them into the topping.

The mixture should resemble coarse crumbs rather than a smooth dough.


Step 5: Fill the Muffin Cups

Place a small amount of the apple mixture into each mini muffin cup.

Don’t fill them completely to the top because the apples will release juices as they bake.

Gently press the apples down.


Step 6: Add the Crumble

Generously sprinkle the oat crumble over each portion.

Lightly press the topping down so it stays in place during baking.

Don’t worry about making them perfectly even. The rustic appearance is part of the charm.


Step 7: Bake

Place the pan in the preheated oven.

Bake for approximately 18–25 minutes for mini muffin-size bites.

The apples should be tender and the topping should be golden brown.

If using a standard muffin pan, you may need approximately 25–32 minutes.


Step 8: Cool Slightly

Remove the pan from the oven.

Allow the Apple Crisp Bites to cool for approximately 10–15 minutes.

This gives the filling time to thicken and makes the bites easier to remove from the pan.

Run a small knife carefully around the edges if necessary.


Step 9: Add Your Favorite Toppings

Serve the bites warm.

For an extra indulgent dessert, add:

  • A tiny scoop of vanilla ice cream
  • Warm caramel sauce
  • Whipped cream
  • Chopped pecans
  • A dusting of powdered sugar

Notes

The most important thing is to dice the apples small and evenly.

Large chunks may take longer to soften and can make the bites difficult to eat.

Don’t skip the cornstarch. Apples release juice during baking, and the cornstarch helps turn that liquid into a delicious syrup rather than leaving the filling watery.

If you’re using very juicy apples, you may want to add an additional ½ teaspoon of cornstarch.

 

The crumble topping should be moist enough to clump slightly when squeezed but still remain crumbly.
