Instructions
Step 1: Prepare the Oven
Preheat your oven to 350°F (175°C).
Grease a 9×13-inch baking pan and line it with parchment paper, leaving some parchment hanging over the sides.
The parchment makes it much easier to lift the brownies out of the pan once they’re completely cooled.
Step 2: Prepare the Apples
Peel and core the apples.
Dice them into small pieces, approximately ¼-inch to ½-inch.
Place them in a bowl and toss with a small pinch of cinnamon.
Set them aside while you prepare the batter.
If your apples are particularly juicy, gently pat them dry with a paper towel.
Step 3: Combine the Butter and Brown Sugar
Pour the melted butter into a large mixing bowl.
Add the brown sugar and whisk until smooth and well combined.
The mixture should look glossy and thick.
Brown sugar is especially important in this recipe because it gives the brownies their chewy texture and deeper caramel-like flavor.
Step 4: Add the Eggs and Vanilla
Add the eggs one at a time, whisking well after each addition.
Add the vanilla extract.
Mix until the batter is smooth.
Avoid overmixing once the flour is added.
Step 5: Combine the Dry Ingredients
In a separate bowl, whisk together:
- Flour
- Baking powder
- Salt
- Cinnamon
- Nutmeg
This helps distribute the spices and leavening ingredients evenly throughout the batter.
Step 6: Combine Wet and Dry Ingredients
Gradually add the dry ingredients to the butter mixture.
Stir gently until just combined.
The batter will be thick.
Don’t worry if it doesn’t look as thin as a traditional cake batter. A thick batter helps create the dense, chewy texture that makes these apple brownies so delicious.
Step 7: Fold in the Apples
Gently fold the diced apples into the batter.
If you’re using chopped pecans or walnuts, fold them in at the same time.
Try not to overmix.
You want the apples to remain evenly distributed throughout the batter.
Step 8: Transfer to the Pan
Spread the batter evenly into the prepared baking pan.
Because the batter is thick, use a spatula to gently push it into the corners.
Smooth the top.
If desired, sprinkle a few additional chopped pecans over the surface.
Step 9: Bake
Place the pan in the preheated oven.
Bake for approximately 30–38 minutes.
The edges should be lightly golden and set.
A toothpick inserted near the center should come out with a few moist crumbs attached.
Don’t wait for the toothpick to come out completely dry.
Overbaking can make the brownies dry instead of soft and chewy.
Step 10: Cool Completely
Remove the pan from the oven and place it on a wire rack.
Allow the brownies to cool completely before adding the glaze.
This is important because the maple glaze can melt and become too thin if poured over very hot brownies.
🍁 How to Make the Maple Glaze
While the brownies cool, prepare the glaze.
Add the powdered sugar to a bowl.
Whisk in the maple syrup, melted butter, vanilla, and a pinch of salt.
Add the milk or heavy cream one tablespoon at a time until the glaze reaches your preferred consistency.
For a thick frosting-like glaze, use less milk.
For a pourable glaze, add a little more.
The glaze should be smooth and thick enough to coat the brownies without running completely off the sides.
🍁 Step 11: Glaze the Brownies
Once the brownies are completely cool, drizzle the maple glaze over the top.
Use a spatula or the back of a spoon to spread it evenly.
For a beautiful finish, sprinkle chopped pecans over the glaze while it is still slightly wet.
Allow the glaze to set for approximately 15–20 minutes before slicing.
🔪 Step 12: Slice and Serve
Use the parchment paper to lift the brownies from the pan.
Place them on a cutting board.
Use a sharp knife to cut them into squares or rectangles.
For cleaner cuts, wipe the knife between slices.
Serve at room temperature or slightly warm.
Notes
The biggest secret to great apple brownies is controlling the moisture from the apples.
Fresh apples naturally contain a lot of water. If you use very large pieces or extremely juicy apples, they can release too much moisture while baking.
Dice the apples relatively small and don’t add excessive amounts.
Another important point is to avoid overbaking.
These aren’t meant to have the dry, fluffy texture of cake. You want them dense, soft, chewy, and moist.
The brownies will continue to firm up as they cool, so it’s better to remove them when a toothpick has a few moist crumbs rather than waiting until it comes out completely clean.
