- 1 cup coconut yogurt (unsweetened or lightly sweetened)
- 1 tablespoon lime zest (about 1 lime)
- 2 tablespoons fresh lime juice
- 1 tablespoon maple syrup (or honey)
- Pinch of salt
Instructions
- Prep the watermelon: Slice off both ends of the watermelon. Stand it upright and cut away the rind. Cut the flesh into 1/2-inch thick slices, then into fry-like sticks.
- Make the dip: In a bowl, whisk together coconut yogurt, lime zest, lime juice, maple syrup, and salt until smooth.
- Serve: Arrange watermelon fries on a platter with the dip in the center. Garnish with extra lime zest or mint if desired.
Notes
Avoid overripe watermelon—it gets mushy fast and won’t hold its fry shape well.
