Ingredients
For the Chicken:
- 4 boneless, skinless chicken breasts
- 1 teaspoon salt
- ½ teaspoon black pepper
- 1 teaspoon paprika
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 2 tablespoons olive oil
For the Toppings:
- 1 ½ cups sliced mushrooms
- 1 large onion, sliced
- 1 tablespoon butter
- 1 cup shredded Monterey Jack cheese
Instructions
Season the chicken breasts with salt, pepper, paprika, garlic powder, and onion powder on both sides.
Heat olive oil in a skillet over medium heat.
Cook the chicken for 5–6 minutes per side until golden brown and fully cooked. Remove and set aside.
In the same skillet, melt butter and sauté sliced onions until soft and slightly caramelized.
Add mushrooms and cook until tender and browned.
Return the chicken to the skillet or place in a baking dish.
Top each chicken breast with the sautéed mushrooms and onions.
Sprinkle shredded Monterey Jack cheese generously over the top.
Cover and cook for a few minutes (or place in oven at 375°F / 190°C) until the cheese is melted.
Remove from heat and let rest for a few minutes before serving.
Notes
- Do not overcook chicken to keep it juicy
- Slice onions evenly for consistent cooking
- Use fresh mushrooms for best flavor
- Let cheese melt slowly for best texture
