Sweet Baby Ray’s Chicken Bites – Easy Sticky BBQ Chicken Recipe

For the Chicken:

  • 2 large chicken breasts, cut into bite-sized pieces
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika

For the Coating:

  • 1 cup flour
  • 2 eggs, beaten
  • 1 cup breadcrumbs or panko

For the Sauce:

 

  • 1 cup Sweet Baby Ray’s BBQ sauce
  • 2 tablespoons honey
  • 1 tablespoon butter
  • 1 teaspoon garlic powder

Instructions

Step 1:

Preheat your oven to 400°F (200°C) if baking, or prepare oil if frying.

Step 2:

Season the chicken pieces with salt, pepper, garlic powder, and paprika.

Step 3:

Set up three bowls: one with flour, one with beaten eggs, and one with breadcrumbs.

Step 4:

Coat each chicken piece in flour, dip into eggs, then coat with breadcrumbs.

Step 5:

Place coated chicken on a baking sheet lined with parchment paper.

Step 6:

Bake for 20–25 minutes, flipping halfway through, until golden and crispy. (Alternatively, fry until crispy.)

Step 7:

In a saucepan, combine BBQ sauce, honey, butter, and garlic powder. Heat until smooth and slightly thickened.

Step 8:

Add the cooked chicken bites to the sauce and toss until fully coated.

Step 9:

Serve immediately while warm and sticky.

Notes

  • Cut chicken evenly for uniform cooking
  • Do not overcrowd the pan or tray
  • Flip halfway for even crispiness
  • Toss in sauce just before serving
  • Adjust sweetness by reducing honey
