2 pounds boneless, skinless chicken breasts or thighs, diced

1½ cups Sweet Baby Ray’s barbecue sauce

1 tablespoon olive oil

1 small onion, diced

2 cloves garlic, minced

1 cup shredded cheddar cheese

1 cup shredded mozzarella cheese

½ teaspoon smoked paprika

½ teaspoon black pepper

½ teaspoon salt (adjust to taste)

Optional garnish: chopped green onions or parsley
Instructions
Preheat your oven to 375°F (190°C). Lightly grease a 9×13-inch baking dish.
Heat olive oil in a skillet over medium heat. Add diced onion and cook for 2–3 minutes until softened. Add garlic and cook for another 30 seconds.
Add diced chicken to the skillet and cook for 4–5 minutes until lightly browned. Season with smoked paprika, salt, and black pepper.
Stir in Sweet Baby Ray’s barbecue sauce and mix well so the chicken is fully coated.
Transfer the mixture to the baking dish. Sprinkle cheddar and mozzarella cheese evenly on top. Bake for 20–25 minutes until cheese is melted and bubbly.
Notes
Avoid overcooking the chicken during the skillet step since it will finish cooking in the oven.
