Strawberry Crunch Cheesecake Bars – Creamy, Fruity & Irresistibly Crunchy

For the Crust:

  • 1 ½ cups graham cracker crumbs

  • ¼ cup granulated sugar

  • ½ cup unsalted butter, melted

For the Cheesecake Layer:

  • 16 oz (2 packages) cream cheese, softened

  • ½ cup granulated sugar

  • 2 large eggs

  • 1 tsp vanilla extract

  • ½ tsp lemon zest (optional, for a fresh flavor boost)

For the Strawberry Crunch Topping:

  • 1 ½ cups fresh strawberries, hulled and chopped

  • ¼ cup granulated sugar

  • ½ cup crushed cornflakes or crispy rice cereal

  • 2 tbsp unsalted butter, melted

  • 1 tsp vanilla extract


Instructions

Step 1: Preheat Oven and Prepare Pan
Preheat your oven to 350°F (175°C). Line a 9×9-inch baking pan with parchment paper, leaving a slight overhang for easy removal of the bars later.

Step 2: Make the Crust
In a medium bowl, combine graham cracker crumbs, sugar, and melted butter. Stir until the mixture is evenly moistened. Press the mixture firmly into the bottom of the prepared pan to form an even layer. Bake the crust for 8-10 minutes until lightly golden. Remove from the oven and let it cool slightly.

Step 3: Prepare the Cheesecake Layer
In a large mixing bowl, beat the softened cream cheese and sugar until smooth and creamy. Add eggs one at a time, mixing well after each addition. Stir in vanilla extract and lemon zest. Pour the cheesecake mixture over the cooled crust and smooth the top with a spatula.

Step 4: Bake the Cheesecake
Bake the cheesecake layer at 325°F (160°C) for 25-30 minutes or until the edges are set but the center is slightly jiggly. Remove from oven and let it cool to room temperature.

Step 5: Prepare the Strawberry Crunch Topping
In a small bowl, combine chopped strawberries, sugar, melted butter, crushed cornflakes, and vanilla extract. Mix gently to coat the strawberries and cereal evenly. Sprinkle the strawberry mixture over the cooled cheesecake layer. Press lightly so the topping sticks. Refrigerate the bars for at least 2 hours before slicing to allow them to set.

Notes

  • Ensure the cream cheese is fully softened before mixing to avoid lumps.

  • Do not overbake the cheesecake layer; it will firm up as it cools.

  • Press the crust and topping evenly to maintain clean, beautiful slices.
