Ingredients
For the Banana Filling:
- 4–5 ripe bananas, sliced
- ½ cup brown sugar
- ¼ cup granulated sugar
- 1 teaspoon cinnamon
- ½ teaspoon nutmeg
- 1 tablespoon lemon juice
- 1 teaspoon vanilla extract
For the Cobbler Topping:
- 1 cup all-purpose flour
- 1 cup granulated sugar
- 1 teaspoon baking powder
- ¼ teaspoon salt
- 1 cup milk
- ½ cup unsalted butter, melted
Instructions
Step 1:
Preheat your oven to 175°C (350°F). Grease a baking dish or casserole pan lightly with butter.
Step 2:
In a mixing bowl, combine sliced bananas, brown sugar, granulated sugar, cinnamon, nutmeg, lemon juice, and vanilla extract. Mix gently and spread evenly into the prepared baking dish.
Step 3:
In another bowl, whisk together flour, sugar, baking powder, and salt for the topping.
Step 4:
Add milk to the dry ingredients and mix until a smooth batter forms.
Step 5:
Pour the melted butter into the baking dish over the banana mixture. Then gently pour the batter over the top without stirring.
Notes
Do not stir the batter after pouring it over the bananas. During baking, the batter rises and forms a soft, golden crust on top while the bananas bubble underneath. This creates the signature cobbler texture.
Use ripe bananas for the best flavor—they should be soft with brown spots for natural sweetness.
