Slow Cooker Cheesy Ranch Chicken & Potatoes – Creamy Crockpot Comfort Dinner

  • 2 pounds boneless, skinless chicken breasts or thighs

  • 2 pounds baby potatoes, halved or quartered

  • 1 packet (1 oz) ranch seasoning mix

  • 1 cup heavy cream (or half-and-half)

  • 1 can (10.5 oz) cream of chicken soup

  • 1½ cups shredded cheddar cheese

  • ½ cup shredded mozzarella cheese

  • 2 tablespoons olive oil

  • 3 cloves garlic, minced

  • ½ teaspoon black pepper

  • ½ teaspoon paprika

  • Salt, to taste

  • Optional garnish: chopped parsley or green onions


Instructions

Step 1:

Wash and cut the potatoes into evenly sized pieces. Lightly grease the inside of your slow cooker with cooking spray or olive oil.

Step 2:

Place the potatoes in the bottom of the crockpot. Drizzle with olive oil and sprinkle with half of the ranch seasoning, paprika, and black pepper. Toss gently.

Step 3:

Season the chicken lightly with salt and remaining ranch seasoning. Arrange the chicken on top of the potatoes.

Step 4:

In a bowl, whisk together heavy cream, cream of chicken soup, and minced garlic. Pour this mixture evenly over the chicken and potatoes.

Step 5:

 

Cover and cook on LOW for 6–7 hours or HIGH for 3–4 hours. During the last 30 minutes, sprinkle cheddar and mozzarella cheese on top, cover again, and let melt before serving.

Notes

Add the cheese near the end of cooking to prevent it from becoming oily or grainy. This keeps the sauce smooth and creamy.
