Sausage, Onion, Bell Peppers & Tomatoes Over Rice – Hearty & Flavorful One-Pot Meal

For the Dish:

  • 1 lb (450g) sausage links or smoked sausage, sliced into rounds

  • 1 large onion, thinly sliced

  • 2 bell peppers (red and green), sliced into strips

  • 2 large tomatoes, diced (or 1 can diced tomatoes, 14 oz)

  • 3 cloves garlic, minced

  • 2 tbsp olive oil

  • 1 tsp smoked paprika

  • ½ tsp crushed red pepper flakes (optional, for heat)

  • Salt and black pepper to taste

  • 2 cups cooked white rice (or brown rice for a healthier option)

  • 1 tsp dried Italian herbs or oregano (optional)

  • Fresh parsley for garnish


Instructions

Step 1: Prepare the Ingredients
Slice the sausage into ½-inch rounds, thinly slice the onion and bell peppers, dice the tomatoes, and mince the garlic. Having everything ready will make the cooking process smooth and fast.

Step 2: Cook the Sausage
Heat 2 tablespoons of olive oil in a large skillet or sauté pan over medium heat. Add the sausage slices and cook for 4-5 minutes, turning occasionally, until browned and slightly crispy on the edges. Remove sausage from the pan and set aside.

Step 3: Sauté the Vegetables
In the same skillet, add the sliced onions and bell peppers. Sauté for 5-6 minutes until they start to soften. Add the garlic, smoked paprika, red pepper flakes, salt, and pepper. Stir well to combine and cook for an additional 1-2 minutes until fragrant.

Step 4: Add Tomatoes and Simmer
Add the diced tomatoes to the skillet and mix thoroughly. Allow the mixture to simmer for 5-7 minutes until the tomatoes break down slightly and form a light sauce. Return the cooked sausage to the skillet and mix everything together. Taste and adjust seasonings as needed.

 

Step 5: Serve Over Rice
Spoon cooked rice onto serving plates and top generously with the sausage and vegetable mixture. Sprinkle fresh parsley on top for a pop of color and added freshness. Serve immediately while warm.

Notes

  • Slice the sausage evenly to ensure uniform cooking.

  • Use a non-stick skillet to prevent sticking and for easier cleanup.

 

  • Allow tomatoes to simmer slightly to create a light sauce that coats the sausage and vegetables beautifully.
