1 package refrigerated crescent rolls (8-count)

6 large eggs

1 cup cooked breakfast sausage (crumbled or cut into small pieces)

1 cup shredded cheese (cheddar, mozzarella, Monterey Jack, or a blend)

2 tablespoons milk or cream (for fluffy eggs)

Instructions
Cook breakfast sausage in a skillet over medium heat until browned and fully cooked. If using sausage links, chop them into small pieces after cooking. Drain excess grease and set aside.
In a mixing bowl, whisk eggs, milk, salt, and pepper.
Heat 1 tablespoon butter in a skillet.
Pour in the eggs and cook over medium-low heat, gently stirring until soft, fluffy, and slightly underdone.
The eggs will finish cooking in the oven, so avoid overcooking them here.
Set your oven to 375°F (190°C).
Line a baking sheet with parchment paper for easy cleanup.
Open the crescent roll can and separate the dough into individual triangles.
Lay them flat on the baking sheet with the wide end facing you—this will help hold the filling.
Sprinkle a spoonful of scrambled eggs on the wide end of each crescent triangle.
Add sausage on top, then a generous pinch of shredded cheese.
Roll the crescent dough tightly from the wide end toward the tip, encasing the filling.
Place each roll-up seam-side down on the baking sheet.
Brush each roll-up with melted butter for a golden finish.
Sprinkle with everything seasoning, garlic powder, or sesame seeds if desired.
Bake the roll-ups for 12–15 minutes, or until the dough is golden brown and cooked through.
Remove from the oven and allow them to cool for a few minutes before serving.
Notes

Do not overstuff the crescent dough or it may burst open during baking.

Scrambling the eggs until slightly soft ensures they stay creamy inside the roll-up.
