Ingredients
For the Sausages

12 breakfast sausage links (pork or turkey)

1 tbsp vegetable oil (optional, for browning)

1 ½ cups all-purpose flour

3 tbsp granulated sugar

2 tsp baking powder

1 ¼ cups milk (plus extra if needed)

2 tbsp butter, melted

Instructions
Step 1: Cook the Sausage Links

Heat a skillet over medium heat.

Add sausage links and cook until browned on all sides and fully cooked, about 6–8 minutes.

Transfer to a paper towel–lined plate to cool slightly.

Toothpicks or skewers can be inserted into each sausage for easier dipping.
Step 2: Make the Pancake Batter

In a mixing bowl, combine flour, sugar, baking powder, and salt.

In a separate bowl, whisk milk, egg, melted butter, and vanilla.

Pour the wet mixture into the dry mixture.

Stir gently until combined—do not overmix. A few lumps are perfectly fine.

Let batter rest 5 minutes for fluffier results.
Step 3: Dip the Sausages

Pour pancake batter into a tall glass or cup (this makes dipping easier).

Hold each sausage by the toothpick and dip completely into the batter, coating evenly.

Let excess batter drip off lightly.
Step 4: Cook the Sausage Dipped Pancakes

Heat a large skillet or griddle over medium heat.

Lightly grease with butter or oil.

Place each batter-coated sausage onto the skillet.

Cook for 2–3 minutes per side until golden brown.

Flip and cook evenly until all sides are firm and crisp.

Transfer to a plate and keep warm.
Step 5: Add the Finishing Touches

Serve warm with maple syrup or honey.

Dust with powdered sugar for a sweet touch.

Add fruit on the side for a full breakfast plate.
Notes
For a perfectly smooth coating, the pancake batter should be thick enough to cling to the sausage but not too thick that it becomes heavy. Adjust with small amounts of milk if needed. Make sure the skillet is not too hot—medium heat creates an even golden crust without burning the batter.
