1 (3 oz) box orange gelatin

1 (3.4 oz) box instant vanilla pudding mix

1 (15 oz) can mandarin oranges, drained

1 cup mini marshmallows

8 oz whipped topping (Cool Whip), thawed

1 cup small-curd cottage cheese (or softened cream cheese for a smoother version)
Instructions
In a large mixing bowl, pour boiling water over the orange gelatin. Stir until the gelatin is completely dissolved. Allow the mixture to cool slightly, about 5 minutes.
Whisk the instant vanilla pudding mix directly into the warm gelatin mixture. Stir until smooth and thickened. Let sit for a few minutes to begin setting.
Whisk in the cold milk until fully combined. Add the cottage cheese (or cream cheese) and mix until smooth and evenly incorporated.
Gently fold in the drained mandarin oranges and mini marshmallows, making sure they are evenly distributed throughout the mixture.
Fold in the whipped topping until light and fluffy. Cover and refrigerate for at least 2 hours, preferably longer, to allow flavors to meld and the salad to fully set.
