1 cup full-fat cottage cheese

¼ cup unsweetened cocoa powder

¼ cup natural peanut butter or almond butter

¼ cup maple syrup or honey

1 teaspoon vanilla extract

¼ teaspoon salt

½ cup oat flour or finely ground oats

Optional: mini chocolate chips or chopped dark chocolate
Instructions
Add cottage cheese to a food processor or blender. Blend until completely smooth and creamy, scraping down the sides as needed.
Add peanut butter, maple syrup (or honey), vanilla extract, and salt to the blended cottage cheese. Blend again until fully combined and smooth.
Add cocoa powder and oat flour to the mixture. Blend until a thick, brownie-batter-like consistency forms. Taste and adjust sweetness if needed.
If using, fold in mini chocolate chips or chopped dark chocolate using a spatula.
Scoop mixture into small bite-sized balls and place on a parchment-lined tray. Refrigerate for at least 30 minutes, or freeze for 15 minutes, until firm.
