No-Bake Cottage Cheese Brownie Batter Bites

  • 1 cup full-fat cottage cheese

  • ¼ cup unsweetened cocoa powder

  • ¼ cup natural peanut butter or almond butter

  • ¼ cup maple syrup or honey

  • 1 teaspoon vanilla extract

  • ¼ teaspoon salt

  • ½ cup oat flour or finely ground oats

  • Optional: mini chocolate chips or chopped dark chocolate


Instructions

Step 1: Blend the Cottage Cheese

Add cottage cheese to a food processor or blender. Blend until completely smooth and creamy, scraping down the sides as needed.

Step 2: Add Wet Ingredients

Add peanut butter, maple syrup (or honey), vanilla extract, and salt to the blended cottage cheese. Blend again until fully combined and smooth.

Step 3: Add Dry Ingredients

Add cocoa powder and oat flour to the mixture. Blend until a thick, brownie-batter-like consistency forms. Taste and adjust sweetness if needed.

Step 4: Fold in Extras

If using, fold in mini chocolate chips or chopped dark chocolate using a spatula.

Step 5: Shape and Chill

 

Scoop mixture into small bite-sized balls and place on a parchment-lined tray. Refrigerate for at least 30 minutes, or freeze for 15 minutes, until firm.

Notes

  • Full-fat cottage cheese gives best texture.

  • Blend thoroughly to avoid grainy texture.

  • Batter thickens as it chills.

 

  • Adjust sweetness based on cocoa intensity.
